If you haven't been inspired to try the aged rums of the Caribbean then you’ve got a lot to look forward to. This applies not only to those who’ve never moved beyond Bundaberg and Coke since high school, but more so to those who are serious about wine, whisky and brandy - in short, those of us who are passionate about ‘flavour’. Quality Caribbean rum has as many permutations of aromas, tastes, textures and strengths as any group of wines or spirits. The rum market in Australia has increased exponentially and the overall quality is superb. We now have access to many small and large producers who are vying for attention and the very reasonable prices mean rum is not just a passing fad.

Aside from the familiar Caribbean island groups, more and more people are becoming aware of a ‘mainland’ rum tradition. Think Nicaragua, Gautemala, Panama or Venezuela. The latter, already famous as the spiritual home of the rum based medicinal bitters, Angostura, is now finding its rums eclipsing that legacy. The country has a number of highly regarded offerings, but those from the Distilerias Unidas in La Miel on the northern slopes of the Andes lift the bar highest.
Their Diplomatico label is the international reference.

We prefer to let what’s inside the bottle do the talking, but it is impossible to overlook this venture’s remarkable accumulation of twenty plus international awards since 2007 (54 medals in contests worldwide), including the SIP Awards, San Francisco World Spirits Competition, Miami Rum XP, Monde Selection and other big guns. Even if the show circuit is irrelevant to you, a different kind of achievement came in October 2011 when the company’s Maestro, Tito Cordero, was honoured at the Golden Rum Barrels Awards as the World’s Best Master Blender. He was the first Venezuelan to receive the award. Given that so much depends on how the distiller and blender create their product, this was the rum world's supreme commendation of Cordero's skill and outright quality fanaticism.

A reinvigorated project that stemmed from an early Seagrams investment in the 1950s, passed on to Diageo, and is now in the custody of the Ballesteros family, the distillery is adjacent to the Hacienda Saruro, where much of the sugar cane is grown. Average daytime temperatures of 30-31C drop by 6-7C at night, a differential which when coupled with high humidity benefits cane growth: it concentrates the sugars and favours the ageing process. Different varieties are grown to make sugar honey and molasses. Molasses is preferred for the light rums, sugar cane honey for the heavy. While many producers are struggling to get molasses with a sugar content above 45%, Diplomatico are ahead of the pack before they even begin. Venezuela regularly achieves upwards of 60%.

Not unlike other distilleries, here pot stills are for richness and weight, column stills for adding freshness and elegance. Between the two are batch kettles that carry out secondary distillations of semi-heavy rums. Varying proportions of each create a hierarchy of styles. Barrel regimes vary, including ex-bourbon with some re-filled single malt whisky casks. Sherry casks are now being experimented with to great effect, as the 2000 Vintage release bears testimony. Finishing departs from the mainstream, as most Diplomatico rums are given only a delicate filtration prior to bottling - gentle enough to maintain fatty acids and maximum mouthfeel - then filtered using 3 micron-thick filter pads. It is minimal interference by world standards, Cordero considering it a formality to ensure the rums retain their clarity and brilliance when exported to cooler climates.

Diplomatico's flagship cuvee is aged for up to twelve years and typically blended from around 80% pot still rums; the remaining 20% are lighter styles from column stills. Cordero mixes a little cane sugar prior to blending which is another reason why the flavour seems amplified compared to some others in the stable. Stylistically this edges Ron Zacapa 23 for satisfaction and sheer saturation and is the one that many of our customers measure other rums by. Those whose taste preferences tend towards the savory may misunderstand what is an unashamedly dessert / quasi- liqueur styled effort that falls into a sub-category of its own. Almost as decadent as a rum can get without cloying the mouth and falling out of balance - there are more complex rums around, but not near this price, nor do they have the same uncanny ability to incite superlatives. The packaging depicts Don Juancho Nieto Melendez, who was a noted rum enthusiast in the town close to the distillery. It's reported that, being something of a globe trotter, over many years "...he amassed a large collection of rums which he took great pleasure in offering his guests at the lavish dinner parties he held at his house."

Tasting note: Brilliant copper with a gold hue. Heady and decadent scents of creme caramel, fresh coffee, chocolate fudge, vanilla and spice. A silky, creamy mouthfeel yields a plush array of dried fruits, raisins and coffee-caramel, counterpointed by a gently warming spirit heat. Perfect balance, seamless integration. Very long, mouth coating aftertaste of vanilla and liquorice strap with a subtle dark chocolate finale. Avoids the too sweet trap. A stunning rum that will instantly convert many a Muscat or PX Sherry drinker. This remains one of the most re-purchased spirits on our shelves. 40% Alc./Vol.

Brilliant water like colour with a greenish tone to the edges. Leaping out of the glass are pungent scents of passionfruit, grapefruit and herbaceous gooseberries followed by some green apple, grassy asparagus and flinty mineral notes. Zesty passionfruit, lime and gooseberry fruits race across the intensely flavoured palate with some herbaceous grassy characters, green apple, subtle asparagus and mineral elements lying underneath. If you’d like to taste Sauvignon Blanc in its modern day glory, look no further. The Marlborough sunshine and pinpoint precision in the vineyard and winery is all found here. Sourced from estate fruit in the Wairau Valley you’ll find star fruit, passion blossom, juicy pineapple and guava. The abundance of fruit continues on the palate with an electric line of acidity and sea spray finish. The dryness of the wine takes elegance to another dimension. Sith purity and drive, this is a triumph of a vintage and its magic is captured in the bottle. Drink now with raw scallop ceviche.

A fine satiny mousse sits over a pale straw coloured base that has pale gold tinged edges and is finely threaded by a very persistent bead of nibble bubbles. Pronounced citrus and oily toast aromas are to the fore with some pear, roasted almond and yeast lees notes ensuing. Finessed and elegant, mouth watering flavours of pear, citrus and baked bread dance vibrantly across the palate underscored by yeast lees, almond and subtle dried honey characters. Creamy tinged texture finishing dry with chalk tinged acidity and a long buttered toast like aftertaste.

A driven and serious DP with aromas of chalk, biscuits, apricot stones and lemons. Some spice and dried flowers, too. So sleek and sophisticated. Elegant. Yet, it’s long and powerful, with a sharp minerality. Tight and precise. Reminds me of bottles from the 1980s, such as 1988. It really takes off. Disgorged October 2021. Drinkable on release in January 2023, but better in a couple of years. A DP for the cellar.

Disgorged in October 2022, the 2013 Dom Pérignon is a charming and elegant vintage for this cuvée. It reveals complex aromas of buttery pastry, spices, citrus oil, almonds, honey and, with aeration, a touch of smoke. The palate is medium to full-bodied, perfectly balanced, with a chiseled and tightly wound profile. The long, cool growing season has brought freshness and a delicate earthy note to the finish. Drink 2023-2043.

There’s no such thing as a non-vintage Dom, just 6 million or so bottles for every vintage released. The 2013 vintage weather was a game of ping pong – crop losses of every kind slashed yields but the reduced crop ripened perfectly. This wine has Dom Perignon’s typical airy elegance, length and balance.

In 2008, former chemical engineer Andreas Greiving followed his lifelong dream to own and operate a vineyard. Domaine Asmara takes it’s name from the Indonesian word "Asmara" which means love and passion. Located in the heart of Heathcote wine region on red cambrian soil, Domaine Asmara is a neighbouring vineyard of what was previously the old Tatiarra estate. Maturation takes place in French oak barriques for a period of 10 months.

A rich, voluptuous Heathcote Shiraz that finishes long and plush

Impenetrable inky black heart with a deep dark red black tinged hue. Heady lush blackberry, liquorice and black cherry scents waft out of the glass followed by toasty vanillin oak, dark chocolate and peppered fennel like notes. The appellation Jurançon is well-loved by sommeliers and found in all the best restaurants of France and around the world, yet sadly it remains off the radar for many wine lovers. Nearly 500 years ago the future King of France Henry IV, was baptised in Pau with the traditional garlic and a spoonful of Jurançon wine. That year was 1553 and just five years later in 1558 a small rural property was entered into the register of lands under the name Caussapé. And it was on this property in 1980, then his parents’ farm, that Henri Ramonteau established Domaine Cauhapé. Since those beginnings on just one hectare, Henri has built up the estate to today’s area of 47ha and become the most renowned producer of Jurançon wines, both dry and sweet.
A blend of 30% Gros Manseng, 30% Petit Manseng, 30% Camaralet, 5% Lauzet and 5% Courbu Blanc fermented in stainless steel and matured on lees for 5 months.
Bright straw colour with a faint glimmer of green around the outskirts and a watery hue. Exotic aromas of pineapple and guava mix with ripe yellow peach, citrus and distinct honeysuckle notes. Bursting with energy the palate features an exceptionally concentrated flavour profile of pineapple and guava fruits that show plenty of textural volume. Some ripe yellow peach, honeysuckle and wet slate characters lie underneath. Finishes dry with mouth watering acidity and a long rich aftertaste that carries a zesty freshness.

Agreeably cool and pretty aromas combine notes of pear and apple with those of citrus confit and anise. There is excellent density to the very punchy and nicely delineated flavors that also culminate in a very dry, clean and focused finale. Cyril Audoin has turned in another superb performance in the 2020 vintage, delivering wines of perfume, energy and precision that transcend stereotypes of their appellation. Marsannay nourishes a number of high-quality domaines, and the village offers rich pickings for wine lovers, but Audoin might well be my favorite. What's more, anyone who laments rising prices in the Côte d'Or should take note of the terrific value this estate's wines represent, because quality at this level should honestly cost quite a bit more.
The 2020 Marsannay Clos du Roy Blanc is brilliant, revealing aromas of pear, lime zest, freshly baked bread, white flowers and buttery pastry. Aromas of citrus oil, pear, vanilla pod and nutmeg preface the 2019 Marsannay Clos du Roy Blanc, a medium to full-bodied, layered and precise wine that's concentrated and tightly wound, with tangy acids and chalky structure. Domaine Clarendon is the ambitious project of Clarendon Hills winemaker Roman Bratasiuk and his son Alex. Planted in 2006 using Astralis cuttings the vineyard is dry grown with yields at less than 1 tonne per acre. The vineyards soil structure is solid rock (the vineyard cultivator broke two 'industrial-as' Caterpillar row rippers on rocks the size of houses) and it is located 315 metres above sea level - the highest altitude vineyard in Clarendon and also McLaren Vale.

A superb Syrah that boasts formidable concentration, power and structure.

Sourced directly from the winery this museum release delivers outstanding value when one considers the bottle age behind it and the fact that the current vintage (2020) is selling for $32.99. A no brainer buy if you like rich, robust reds.
Exceptional colour for a Syrah with 12 years bottle age behind it displaying an impenetrable inky black heart along with an equally deep dark red black hue. Engulfing the olfactory senses are potent aromas of ripe blackberry, liquorice and black cherry which intermix with some vanillin cedar, traces of dark chocolate and peppered earth notes. Boasting magnificent density, power and depth of fruit along with a firm structure, the bold, weighty palate is well and truly alive and kicking. Rich, opulent blackberry, liquorice and black cherry fruits are backed by muscular tannins which assert their presence, imparting a grippy feel onto the back half. Vanillin cedar, earth and blackpepper characters linger through the long, densely fruited yet robust finish.

Wafting out of the glass are heady scents of black raspberries, liquorice and black cherries which are interwoven with dried meat, scorched earth and peppered herb notes. Concentrated and powerful, waves of rich, super succulent black raspberry, liquorice and black cherry fruits swamp every corner of the mouth. Infusions of provincial herbs, scorched earth, incense like characters and peppered meats lie underneath. Ripe chewy tannins lend some muscle to what is otherwise a lavish feel. Concludes very long and seductive.

All Grenache from very old vines and the clay soils of the Les Fouquesses lieu-dit, the 2020 Rasteau Héritage 1924 reveals a vivid purple/ruby hue to go with perfumed aromatics of kirsch liqueur, ground pepper, and flowery incense. It's medium to full-bodied, pure, balanced, and has a seamless mouthfeel. Raised all in concrete tank, this naked expression of Grenache is going to drink beautifully for a decade. Drink 2023-2033.

Domaine du Pegau Reserve is produced from 85% Grenache, 9% Syrah and 4% Mourvedre, Counoise and other varieties. While previously Cuvee Laurence was made from a specific barrel selection, today the wine is same blend as the Reserve except it has been aged in barrel for a longer period of time. The grapes are not destemmed, and the natural yeast fermentation is completed in traditional, cement vats before ageing in old, French oak barrels for an average of 40 months.
According to Laurence Feraud, the wine is aged to approximate what might happen with Pegau Reserve after ten years of aging. On average, close to 650 cases are produced each vintage of Domaine du Pegau Cuvee Laurence.
Black as night heart with a deep dark red black tinged hue. Wafting out of the glass are ripe heady scents of black raspberry, liquorice, blackberry and black cherry which meld into scorched earth, dried meats, hints of leather and pepper. Rich black cherry, liquorice and black raspberry fruits are backed by a muscular tannin structure. Notions of scorched earth, leather and peppered dried meats add a further nuance to the back palate. Dry, slightly grippy finish. Excellent power and concentration with a long robust aftertaste.

Enveloping, warm and spicy nose with an extremely wide spectrum of aromas, ranging from dried rose to graphite via thyme and smoked bacon. Very powerful, concentrated and earthy, yet there’s brightness in there that makes it shine, Stunningly fine tannins power the super-long finish. Drink or hold.

I loved the 2017 Châteauneuf Du Pape Cuvée Laurence. It has a more classic style in its Provençal aromas and flavors of peppery herbs, garrigue, sandalwood, and charcuterie, with medium to full-bodied richness and depth on the palate. It’s a classic, complex, gorgeous wine in the making.

Domaine Pegau Cuvee A Tempo is made from a blend of equal parts, Grenache Blanc, Clairette and Roussanne. The wine comes from parcels that are farmed using 100% organic farming techniques, and made its debut with the 2014 vintage. Vinification and ageing is performed in a combination of French oak barrels, stainless steel tanks and cement egg shaped vats. The production is quite small, with about 100 cases being produced in total each year.
Bright pale straw core with straw tinged edges and a watery hue. Intense ripe pear aromas intermix with hints of peach, dried honey and spicy apricot. Subtle crème brulee, citrus and wet stone notes are also evident. Rich spicy pear and apricot fruits are complimented by honeysuckle, crème brulee and citrus elements. Bottled in May, the 2019 Châteauneuf Du Pape Cuvée A Tempo Blanc is another incredible white from this estate. More melon, exotic tropical, and even hints of pear-like fruits as well as green almond and chalky mineral notes define the nose, and it’s racy and pure on the palate, with hints of licorice and salty minerality, bright acidity, a laser focused texture, and a great finish. Give it a year or two and enjoy over the following two decades. Drink 2022-2043.

A long time direct import, Domaine les Aphillanthes is located in the tiny village of Travaillan, just to the north of Châteauneuf du Pape, and is run by Daniel Boulle. Undeniably rich, chewy and powerful renowned Rhone wine critic Jeb Dunnuck describes them as ‘some of the best Cotes du Rhones out there…’.
A blend of 92% Grenache, 7% Mourvedre and 1% Carignan produced from vines planted in 1921 that yield little, but deliver incredibly concentrated fruit. Very deep dark red black in colour with a dark red hue. Fragrant spicy red to dark raspberry and red cherry scents infused with fresh herbs are married to hints of graphite, dried meats and blackpepper. Rich pepper laced red raspberry, liquorice and dark cherry fruits show ample power and freshness across the medium to full bodied palate. Provincial herb, crushed volcanic rock and spicy dried meat accents add further nuance. Lending a meaty, robust like feel is bright acidity and muscular tannins. The 2019 Rasteau Cuvée 1921 comes from ancient vines (planted in 1921) and is 92% Grenache, 7% Mourvedre, and 1% Carignan, which I believe was raised in tank. It takes plenty of air to open up and offers a striking Provençal bouquet of sweet black cherries, flowery incense, peppery garrigue, lavender, and saddle leather. It actually reminds me of walking through a street market in Vaison-La-Romaine in the south of France with its complex, incredibly satisfying Provençal aromatics. These characteristics all carry over to the palate, where the wine is medium to full-bodied, has a round, layered mouthfeel, ripe yet present tannins, and a great finish. It doesn't have the sheer elegance of, say, the 2016 or 2010, but it's a beauty. Give it a decant if drinking any time soon. It should put a smile on your face any time over the coming decade or more. Drink 2023-2034.

The la Biche undergoes a combination of ferments in both stainless steel and 400 litre barrels. 2022 was an exceptional vintage for Vouvray yielding wines of perfume, finesse and lip-smacking freshness.
Brilliant very pale straw colour with a subtle glimmer of green around the edges and a watery hue. Fresh pear and red apple scents are trailed by hints of cinnamon, honeysuckle and quince. Showing good intensity and possessing a nicely rounded feel are fleshy pear and red apple fruits. Also chiming in are quince, delicate honeysuckle and traces of cinnamon. Fresh acidity finishing dry with plenty of energy and length.

Since the 17th century, the Roche family history has been bound to Cairanne, one of the most notorious villages in the Southern Rhone. Romain Roche is now in charge of perpetuating the family philosophy and their "all in the vineyards" approach to their profession. The grapes for the Cairanne come from a selection of naturally low yielding Grenache and Syrah vines between 40 and 105 years of age, within two distinct terroirs. The Grenache grows on the red clays and "Galets" of the Guarrigues plateau, while the Syrah comes from the Marly slopes of "La Montagne" with a northern exposure. Also included is a portion of Carignan. Each block is fermented separately with only the Syrah component matured in barrels and demi-muids (600 litres) for a period of 10 months.
Dense black as night heart with a deep dark red black tinged hue. Heady black cherry and black raspberry scents fill the nostrils complimented by liquorice, provincial herbs, scorched earth and subtle peppered meat notes. Rich, lavish and dense the full bodied palate is awash with dark to black raspberry, liquorice and ripe black cherry fruits. Scorched earth, infusions of provincial herbs and spicy pepper elements linger underneath. Ripe and fleshy yet possessing a sturdy tannin structure and vibrant underlying acidity, it has a long sweet, juicy finish.

The 2020 Cairanne shows the more elegant, charming, pretty style of this appellation, revealing notes of Provençal garrigue, violets, candied strawberries, and black raspberries. Medium-bodied, seamless, and downright pretty, it’s going to drink nicely right out of the gate and put a smile on your face over the coming 5-7 years.

An explosion of super juicy fruit.

Made predominately from 70 year old Grenache vines. Very deep dark red black core with a vibrant dark red hue. Elevated dark raspberry and liquorice scents combine with dark cherry, provincial herb and peppered earth notes. Rich, intense and succulently fruited yet remarkably fresh the palate is drenched with a tidal wave of dark to black raspberry, liquorice and ripe black cherry fruits. Infusions of herbs du Provence, subtle scorched earth and pepper linger underneath. Explosive power and depth. Ripe, slightly chewy tannins finishing very long and super juicy.

Moving to the two tiny production releases, the 2022 Cairanne Marcel Roche is 100% Grenache from the oldest vines of the estate and is still aging in stainless steel. It has a ripe, spicy, savory, medium to full-bodied style as well as lots of Grenache character in its red and black fruits and Provençal garrigue nuances. It has plenty of structure and is going to benefit from a few years of bottle age.

An estate blend of cabernet and shiraz. There's nothing that the human combination of Duke Ranson in and around the vineyard and the skills of winemaker Robert Diletti can't achieve. Dune is a project of brothers Duncan and Peter Lloyd (next generation Coriole) using fruit sourced from their vineyard in the Blewitt Springs sub-region of McLaren Vale. Blewitt Springs is known for deep sandy soils on yellow clays where Shiraz typically ripens later than other parts of McLaren Vale. It typically produces Shiraz of lifted dark fruit, floral and meaty notes, the tannin is fine yet chalky and the wines are often medium bodied rather than full.

A rich, gorgeously fleshed blend that makes for irresistible drinking.

A blend of Shiraz, Grenache and Mataro along with a small amount of Touriga Nacional. Black as night heart with a dark purple black tinged hue. Captivating the olfactory senses are fragrant dark plum, liquorice, blueberry and dark raspberry aromas which are subtlety infused with fresh herbs, vanillin earth and a whiff of pepper. Rich, plush and concentrated yet only carrying medium body weight, the palate is awash with succulent blackberry, liquorice, dark plum and raspberry fruits. Lying underneath are notions of scorched earth and peppered dried herbs. A touch of blueberry freshness shines through on the finish. Expansive and opulently textured it possesses velvet smooth tannins and concludes long, gorgeously fleshed and juicy. Awarded the Arthur Kelman Perpetual Trophy for Best Shiraz Dominant Blend at the Sydney Royal Wine Show.

Shiraz, Grenache, Mataro with a little Touriga Nacional.
Plum, blueberry, sage and aniseed, spice and dried flowers. It’s medium-bodied, something of a Dutch liquorice character, also ferrous, inky and earthy, fine silty cocoa tannin, and a satisfying finish of excellent length. I love the grip and savoury complexity. Very good. Drink 2023-2028.

Eden Hall was established by David Hall, a well-respected spinal surgeon, and his wife Mardi when they purchased the Avon Brae property in 1996. They quickly set about re-establishing the vineyard and the first commercial release was in 2004. Today the property has over 80 acres under vine. Sourced from selected rows in Eden Hall’s Block 4 vineyard, the wine was matured for 22 months in French oak and spent more than a year in bottle prior to release. The talented Phil Lehmann was the winemaker of this large scaled 2021 Shiraz.

A powerhouse of dense, rich, voluptuous fruit.

Impenetrable inky black in colour with a very deep dark red black tinged hue. Wafting out of the glass are heady aromas of ripe blackberry, liquorice and dark plum which are married to toasty vanillin oak, dark chocolate, fennel and peppered earth notes. Rich, voluptuous and dense, the palate is a super concentrate of ripe blackberry, liquorice, dark plum and black cherry fruits. Smoky vanillin oak, fennel and peppered earth elements also chime in to add further interest across the back half. Velvet smooth yet solidly structured tannins. Boasting magnificent power and depth it has an ultra-long finish that’s decadently rich and plush.

Filled in February 2007, cask #18 previously contained Oloroso Sherry. The slightly larger outturn delivered 995 bottles at 61% Alc./Vol. Non chill filtered.

“Ballechin” is the heavily peated version of Edradour and comes matured in a wide variety of wood types. The name originates from a fellow Perthshire farm distillery, which sadly closed its doors in 1927. Alfred Barnard, who catalogued all the distilleries in the UK in the 1880’s, made reference to having tasted a peated dram there. The new-age Ballechin is a whisky born out of experimentation but has attained a quasi-cult status in a relatively short time. When Edradour was bought in 2002, Andrew Symington called on the services of Iain Henderson, the former director of Laphroaig to create a second, very peaty malt. Available since 2006 and employing barley peated at a whopping 50ppm - a rate comparable to the smokiest malts of Islay - "Ballechin" was initially sold as a yearly vintage in limited runs of 6000 bottles. There’s now a broader variety available, including private and exclusive bottlings, however the cask strength editions are the most sought after. They remain small-scale single cask releases available in Australia sporadically throughout the year.

Epsilon is the project of Aaron and Julie Southern (Julie is a member of the Kalleske clan) who own vineyards in the Northern part of Barossa. As the familiar story goes with so many growers they sold off their fruit to larger wineries until a chance meeting with the Massena boys Dan Standish and Jaysen Collins. Under their guidance they convinced them to start up their own brand in 2004 and build a winery on the property. Maturation takes place for approximately 12 months in seasoned French oak hogsheads with only the best batches making the final blend.

The nose is flooded with scents of spicy dark plum and liquorice which intermingle with lightly smoked vanillin cedar, fennel, graphite and blackpepper. Rich, concentrated and plush the palate is soaked in succulent dark plum, blackberry and liquorice fruits which overlay a smoky vanillin cedar, fennel, graphite and blackpepper back drop.
