Notes from the producers... Nose: Delicate on the vanilla pod, honey and warm woody notes. After agitation, subtle notes of gingerbread with cinnamon, nutmeg, vanilla and ginger appear. Powerful and harmonious, the nose suggests a mouth with a bold character. Palate: The attack on the palate is powerful on spicy notes: cinnamon, vanilla, nutmeg, pepper, almost hot pepper… spicy heat gradually gives way to toasted, roasted and almost smoky notes of oak wood. ...The whisky has a lot of power, which is never unpleasant. The dirty smoke becomes increasingly "cleaner" in the finish and becomes lingering campfire smoke that lingers on the cheeks with oak spice and a slight sweetness. I personally like it very much. - whiskybase.com

1997 Signatory Vintage Macallan 25 Year Old Symington's Choice Cask Strength Single Malt Scotch Whisky (700ml)Speyside, Highlands, SCOTLAND$2999. 00Bottle$35988.00 DozenABV: 54.8%Signatory’s founder, Andrew Symington was working at the prestigious Prestonfield House Hotel when he bought his first cask of whisky: a 1968 Glenlivet. Today, his good taste has transpired as a series in itself, highlighting his favourite casks from the vast selection housed in the enormous warehouses at Edradour in Pitlochry. The first Symington’s Choice selections were released in 2023 with a focus on heavily sherried single casks aged between 20-35 years old. It's these whiskies that (mostly) make up the current shipment. Subsequent releases will be a little younger, generally 15-20 years old, though still predominantly from first fill sherry casks. Apart from the expected quality, there is a 'wow factor' to the prices that makes each and every one worthy of consideration.
Obviously matured in a first-fill Oloroso sherry butt, you'd have to go back to the 1980s to discover Macallans as deep and dark as this. We have a small number of bottles from cask 12/3. Serge Valentin from whiskyfun tasted sister cask 12/4 and was impressed. Expections would be similar here. 649 bottles produced. 54.8% Alc./vol. Non chill filtered.
Notes from a sister cask 12/4... The whisky is almost as dark as the label! Here is a brand new range from Signatory, very high-end, with some pretty extraordinary names like Laphroaig, Bowmore, and indeed, Macallan. The prices seem high, but I'm sure it's worth it and not just marketing hype. At least it's not another NAS with a fancy name and story, straight from ChatGPT or Wikipedia. Colour: coffee. Nose: a pretty wonderful dry sherry, full of Havana tobacco, prunes, dried dates, old walnuts, and hoisin sauce, with an extraordinary fermentary and even slightly acetic side (old balsamic vinegar). We're a bit in the territory of a very old Ténarèze, or of the best of the Macallan 'Gran Reserva' from back in the day. With water: it becomes rather more elegant, almost slightly austere, with a very "grand chocolate from a great house" side. I always find it amusing to hear my Swiss, Belgian, Italian, Spanish or French friends claim that they make the best chocolates in the world. What if it were the Scots, perhaps even Scots from Pitlochry? Mouth (neat): creamy, goes down easily! Well, almost, there's still a lot of thickness, a syrupy texture, liquorice and pipe tobacco, a bit of tar, lots of dried prunes, Corinth raisins, precious molasses (if it existed), then peppermint and very chocolatey toffee... With water: it peacocks and goes fractal, with lots of spices, dried fruits, organic matter, and various old liqueurs. Alright, let's finish it, we don't have all day... Finish: long as a day without bread and indeed, rather on very damp pumpernickel, chocolate, and competition fruitcake (we have the winner). Comments: a real hit, after Signatory's sublime range of '30th Anniversary Bottlings' of three or five years ago. Come on, let's store it in its bottle for twenty more years to try to reach 95/100, then we'll talk about it again. What's sure is that this is Macallan as in 'Macallan', that is to say In compliance with what is written on the label of the bottle that follows... 93 points - whiskyfun.com

You don't often see Glen Keith pop up, even from independents. One of the younger distilleries in Scotland, having only been founded in 1957 by the Chivas Brothers, in 2000 the distillery was mothballed but fired up again thirteen years later. Finding mature stocks like this is a rarity. Matured in a second fill oloroso sherry butt, Cask No.7 yielded 635 bottles at a natural strength of 58% alc./vol. Non chill filtered.
Other reviews... The second fill oloroso butt used to mature this Glen Keith did a hell of a job. Men! Kicks off with a fine dose of oranges and slight sour raspberries. But there’s more of those orange fruits, like peaches and apricots, they really stand out. An excellent balance between distillate and wood. Added in a nice fudgey sweetness, some tobacco and obligatory spices. Good neat, better with a teaspoon of water. I enjoyed this Glen Keith very mucho - recommended! - whiskybase.com

Lime and lemongrass, a honey toast thing, bright and juicy, excellent flavour with a gentle chalky grip, has weight but it’s nicely balanced and the finish is very long. This is excellent. Right in the slot, though no hurry. Drink 2024-2034+

Gary Walsh – The Wine FrontOnly five years young, that extra time has certainly done its thing. A superb wine, I had the luxury of tasting this De Iuliis Aged Release Single Vineyard Semillon alongside its newly released 2024 sibling and it was quite the treat to see where things are at. Go here.
There is still plenty of energy within and the slight toasty character expected with age is starting to show its hand. Honey tones are seeping through too, with lemons and limes not far from the action, albeit not as vibrant but there is still some zip. A sip slow and consider type of wine, match this with the textural splendour of scallops and heaven awaits. This will live comfortably for at least another decade. Superb stuff indeed. Drink to 2034+

The white peach fruit, white flower aromas and slatey minerality all tingle on your palate, then flicker on and on in a totally fascinating manner in the nearly endless finish. Hitting mid-weight and savoury, absent any confection, which can sometimes dog the variety, this is so adroitly made, picked at the right time and avoiding any showiness by using winemaking tools to frame, not control, with the line of fine and ripe, sandy tannins underlining its class. Matured for a minimum of two years in a combination of American and French oak barrels, some of the reserve components are up to thirty years old. The tequila itself which has been described as "rich and brandy-like" doesn't change much from year to year. And just as consistency has become its hallmark, so too has been its high praise. What does change annually is the packaging, with a different Mexican artist making each release a collector’s item.
In 2023 the box has been designed by artists Rolando Flores and Gabriel Cázares of the Mexico-based Tercerunquinto Collective. The custom art titled “Structuring a Landscape”, features a geometric abstraction of the landscape of Jalisco.
[2017 edition tasted from a 20ml sample] Pale copper gold. The bouquet combines blanco-like vibrancy with the kind of depth you'd expect from XO cognac - brine, charred capsicum, smoldering eucalyptus, beeswax, vanilla and menthol... with air contact, it also presents a drier, woody aspect including cigar box, cedar and white pepper. Likewise the silky delivery matches sappy agave and butter menthol lozenge-like flavours against drying astringency. It's delicate and somewhat fleeting through the finish, trailing off with black tea, potpourri, white pepper, hints of grilled pineapple, vanilla and trace beeswax. The quirky name has some context to it, the wine sourced from two vineyards in different regions, one in Kersbrook (Adelaide Hills) and the other in Blewitt Springs (McLaren Vale), both of which sit under a larger official appellation known as the Adelaide zone. The name also refers to winemaker Ben Riggs’s love of the Montepulciano in Italy’s Abruzzo region, and his desire to create a worthy South Australian reflection. That he has – a vibrant wine nose to tail, of sun-kissed violet flowers with an underlayer of dusty cellars, toast and blackberry conserve, the palate echoing its aromatics, rich yet balanced, an exotic spicy feel threaded within the flavour profile. A fruit-forward style in a modern frame – tasty to the hilt.

Other reviews... Yes, it needs a little time to get out of the rut, then there are a lot more red fruits; the HP orange is also there. Plus mandarin and a dash of lemon. I'm imagining heather smoke knowing that it's an HP... but the style is unmistakably distinctive. Typical sherry spices and aromas, albeit rather subliminal, but an Italian herb garden is there. Admittedly though, I’m not a professional sommelier, and lack the experience such people bring to sensing gradations of wine hailing from neighboring vinyards in France – so someone with a more finely tuned snoot may take more away from this than I did. But I liked it. I liked it a lot. Above, I wrote that really good whites are either cheerfully rude or deceptively polite: this one tilts slightly more towards the latter while still remembering its objurgatory antecedents. It’s an enormously drinkable dram, near perfect strength, with wonderfully delicate and strong tastes mixing up both sweet and salt in a terrific white rhum. You could drink it alone or mix it as you please, and you’d enjoy it either way, with nothing but a nod of appreciation for what HSE have achieved here with such seeming effortlessness. For those new to French cider or just looking for something different from the sweeter, mass-produced ciders common in Australia, Manoir Kinkiz 'Fouesnant' is the place to start. Older apple varieties are harvested from orchards located in Pays Fousnantais. Pressing is done when the fruit is fully ripe, from late September to December. Fermentation is slow, ending with natural fermentation in the bottle for about two and a half months, infusing a fine bubble. Recognised for its pleasant bitterness, roundness and persistent aromas of fresh apple, fresh butter and hazelnut, this 'semi-dry' expression is most commonly enjoyed as an aperitif or with light snacks. 5% Alc./Vol.

This is the other wine in the new range of Old Vines and what a cracker it is. After gentle basket pressing, this wine went to American oak barrels for a year and a half. It has given the final wine a sleek, plush and generous nature which works wonderfully well. A deep red hue, there is real concentration here. We have notes of raspberries, truffles, plums, black fruits, leather and cocoa powder. A wine of power, focus and concentration, this really needs a few years in the cellar before opening (not that you won’t enjoy it earlier if patience is not your thing). After that, it will drink beautifully for the following ten to twelve years. A very long finish with fine, silky tannins, the palate sees the emergence of notes of soy and beef stock. Terrific stuff and in comparison, with some prestige releases from the region, brilliant value.

The cider market in Australia is dominated by large-volume brands produced on an industrial scale by multinational beer companies. All that is changing as quality European examples reach our shores. Few realise what a wonderful history cider has in many European cultures. Texts mention events such as Louis XI's ban on the production of beer, to use the barley to ease a famine stricken population. Farmers subsequently looked for alternative palliatives, and so a passion for cider was born. The Normans popularised cider after their conquest of England in 1066, and Spaniard Guillaume Dusus brought new apple varieties to Normandy in the 16th Century. With him, improvements in fermentation techniques led to better quality. Later, to curb the dominance of imported brandy, cider was distilled, transforming into the divine spirit we know as Calvados! (Apple Brandy).
European cider frequently distinguishes those producers at the high end of the passion scale. The ciders of Leon Despiches et Fils are a case in point, being wonderful expressions from Saint Desir, just outside Lisieux in the heart of Pays d'Auge. Organically grown pears are sourced from trees between seventy five and one hundred years old and include 35% Poire Verte de Manerbe, 35% Poire de Blanc and 30% Poire de Grise. Lightly filtered with a fine natural bubble, the style is described as semi-sweet with lovely freshness and finesse making an excellent match with seafood. 4% Alc./Vol.

Finishes dry with lemon, very faint funk (hay) and faint pears, the latter spilling into the aftertaste, which stays sour and vinegary. Very low bitterness. It’s a blend of cabernet with a small amount of malbec, an important variety at Vasse Felix. Smooth and seamlessly structured with a sublimely elegant expressive palate. It’s medium-bodied with a fine boned structure. Subtle use of oak and fine tannins adds support. The best yet.
