    Apple and passion fruit are the aromatic top notes, hovering above a nose of honey and musk. Notes of honey, caramel and maple syrup seem to unite on the palate, guided and framed by the sharpest, most luminous acidity. Extremes are at work here, revealing both utter sweetness and utter acidity. Dazzling all of the senses, this wine leaves a rich aftertaste.

    Tokaji Aszú is a noble sweet wine made by blending dried and noble rotten berries to a dry base wine. Taste and quality of the Aszú mainly depend on the number of hods (puttonyos) filled with dry berries (25 kilograms each), which are added to a cask (Gönc type, 136 liters) of dry base wine. Consequently, the proportion between aszú berries and dry base wine is about 1:1 for a 6 puttonyos Aszú. Aszú Eszencia is made with the same process, and is a classification above 6 puttonyos where the ratio of noble dry berries to wine is more akin to 7-10 puttonyos.     The 2015 (Lieser) Niederberg Helden Riesling Auslese –Goldkapsel– (AP 14) is very intense and fine at the same time, with smoky and lemony flavors, a remarkable concentration and a perfume-like flavor of grapefruits. This wine is pure, piquant and concentrated, highly finessed, fresh and light on the palate. This is an intense, lush and elegant Auslese with a delicate and endlessly salty finish that reveals a very attractive grip and huge aging potential. With 7% alcohol and just a bit of botrytis.

    The Château Caillou 2014 is 100% Sémillon and contains 120 grams per liter residual sugar. It has a slightly conservative nose: nothing faulty here but just lacking the breeding of a classed growth. The palate is better with good tension and energy, a little pinched perhaps with a very linear, citrus fresh, almond and pineapple-driven finish. If the aromatics improve by the time of bottling it will deserve a higher score, but I will remain conservative in judgment for now. Drink 2017 - 2030

    Sauternais in Bordeaux is the most iconic of a handful of regions in the world where wine production is centered around botrytis cinerea, the fungus responsible for the heavily concentrated nectars that are turned into the golden wines of Bordeaux. These 'vins liquoreux' or 'stickies' represent one of the most remarkable collisions of history, geography, climate, art and science in the world of wine. Their origins in France are unclear, bouncing between hard facts and legends. The first specific reference to botrytis and wine in the area per se dates back to 1716, when Lamoignon de Courson, the Governor of Guyenne (wider Bordeaux region), wrote that one should harvest only grapes that are almost pourries or rotten.

    Barsac and Sauternes had probably been singled out before then, thanks to their peculiar geology and geography. Gravels deposited over calcareous, marly and sandy clay substrates were ripped from the Pyrenees and the Central Massif and carried by the Garonne river and several of its affluents. The river had shifted over many different beds, east and west, during the quaternary era. Successive deposits created a complex structure of terraces with different orientations, layers of gravels, and minerals of various natures.

    Noble rot eventuates in most vintages in Sauternes, subject to some exceptional and fortuitous circumstances. This is how it happens: The warm Garonne flowing at the foot of these terraces is met in several places by smaller streams that get cooler as they flow through the Landes forrest. Where these flows meet the resulting effect is early morning fogs, a kind of "Turkish bath" for the grapes, and the perfect media for the onset and the development of the botrytis fungus. Paradoxically, healthy grapes are essential for 'Noble Rot'. But this descriptor is also a little misleading. Rot does not refer to the decomposition of dead grape cells, but rather to an external mummification of the grape. Botrytis is a parasite that attacks the grape's skins, but doesn't destroy their flesh. Instead, the grapes attain a uniform porosity that when combined with late morning breezes and sunny afternoons promotes the loss of up to 50% of the grape's moisture. During these freak conditions not only are flavours concentrated but new flavours actually begin to form - in particular the decadent honeyed, citrus, apricot, peach and caramel notes, and sometimes even iodine.

    Being a natural phenomena, uniform botrytis is not easily achieved. This is why vignerons must frequently employ specially trained teams at harvest who pick grapes over tries successives (several passes). In some estates, grapes are literally harvested one berry at a time. Yields are understandably minuscule (the traditional reference is that a single vine should produce a bottle of wine. At Rieussec, for example, a single vine will be lucky to yield one glass). The desired transformations in the grapes are accompanied by increased glycerol and glucans (the latter being unfermentable sugars - incredibly difficult to deal with in the winery). It's the glycerol that provides the luscious, satiny mouthfeel of classic Sauternes. It too can be the cause of 'problem children' ferments if not managed with a high degree of vinicultural intuition. The challenges do not stop there. Juice that's loaded with sugar and enzymes has a high spoilage potential, not to mention the sticky difficulties that 'stickies' add to almost all winery processes. This is no wine for beginners, but when successful, the magical characteristics that make Sauternais so unique are retained making for some of the world's most unforgettable wine experiences.

    At close to half its regular import price, the value here is nothing short of remarkable.

    Chateau Rieussec, Lafite Rothschild’s Sauternes enterprise has a second label, 'Carmes de Rieussec' named after the monks of the Carmes de Langon, the original owners of the estate. The monks were disbanded during the Revolution after which the property was transferred to private hands. Carmes de Rieussec is subjected to the same rigour in the vineyard and winery as the Premier Cru, with barrels deemed to lack the intensity of the grand vin sorted after 18 months and given to the citrus accented Carmes cuvee. It is worth noting that this is a voluntary move, and not strictly an act of declassification - as such the Carmes de Rieussec could be labelled as a Premier Cru.

    Tasting Note:Brilliant golden colour with pale gold hue. The nose shows excellent intensity with lifted scents of ripe peach, apricot and honey followed by some tropical fruit and spice notes. Thick, luscious and very concentrated the palate boasts superb richness with mouthfilling flavours of honey, ripe peach and tropical fruits followed by some honeycomb and spice. Clean finish. Outstanding length with very long luscious and rich aftertaste of honey, ripe peach and tropical fruits along with a touch of spice.
    Drink over the next 5-8 years (2011-2019).

    Sauternes & Cadillac: How to get the most out of them.
    Count Lur Saluces of the world famous Sauternes producer, Château d'Yquem, once said drinking his family's wine with a dessert is a disaster. "It should be consumed with Rocquefort cheese, foie gras or even roast chicken", he said, "but never with a dessert". The reason is that desserts can often have a sugar content greater than 20% while sweet wines are seldom greater than 10%. Very sweet foods can overbalance the perception of a wine's sweetness, making the wine taste thin and somewhat acidic or sour. Despite this single proviso, the versatility of Sauternes wines should not be underestimated and an entire three course meal can easily be created around Sauternes wines alone, with the results being some of the most stunning wine and food matching sensations one is likely to experience.

    There are traditional combinations like freshly cracked walnuts and soft fruits, however one might not consider much more adventurous alternatives unless you visited Sauternes itself and spent some time with the locals. There, roast duck or rough barbeque lamb chops marinated in Sauternes make for a spectacular match, as do ewe's milk cheese, a quiche or pan fried trout. However, perhaps the most surprising match, and a favourite of Comte Lur Saluces, is crayfish and Sauternes. The combination is nothing short of sublime. Should any of the above ingredients be unavailable or simply beyond budget, Australian chef and food writer, Gail Thomas, has a simple, inexpensive alternative. "I've found when we've served d'Yquem, usually put with foie gras, blue cheese, lobster and fresh pear, which are supposedly 'the matches' , the pear wins out every time!" Whatever you choose, always remember, when serving these wines, they should be only slightly chilled. Just taking the edge off is enough.

    The 2016 Carmes de Rieussec is a blend of 57% Semillon and 43% Sauvignon Blanc. It has an attractive bouquet with simple honey and yellow flower aromas tinged with vanilla pod. The palate is simple and quite linear, maybe missing some botrytis and viscosity towards the finish. Not bad, but I have encountered better Carmes de Rieussec in the past and the 2015 is much better.

    The 2015 Carmes de Rieussec is a blend of 87% Semillon, 7% Sauvignon Blanc and 6% Muscadelle. It has a gorgeous lemon curd, honeysuckle and vanilla-scented bouquet that transcends what you consider to be a deuxième vin. The palate is very well balanced with a crisp line of acidity, very harmonious with fine weight and tension. This is a delightful Sauternes from the Rieussec team that should drink early, but clearly has the substance to age.

    The 2015 Carmes de Rieussec, the second wine from Rieussec, is delightful in this vintage. Orange peel, coconut and a host of tropical fruits are nicely delineated in this moderately sweet, refreshing Sauternes. Silky, perfumed and beautifully layered throughout, the Carmes is an ideal dessert wine for readers who find Sauternes too heavy or sweet. The Carmes is simple, uncomplicated and a real pleasure to taste. That's all there is to it.

    Bright deep straw colour with pale gold hue. The nose delivers strong botrytis character with aromas of honeycomb, ripe apricot and spiced honey with some dried raisin end notes. Luscious mouthfeel with very concentrated flavours of honeyed apricot, tropical fruits, marmalade and spice with a clean dry finish. Excellent length with long aftertaste of honeyed apricot, marmalade and spice. Tasted against the 2005 Le Tetre, this wine displayed an extra degree of richness and mouthfeel.

The palate is unctuous on the entry with a touch of ginger, plenty of botrytised fruit but just missing the persistence on the finish that cuts away a little swiftly, just as the wine is getting into its stride. Still, this should be a capable deuxième vin.

There is a hint of light toffee, followed by some spice on the back palate. Clean acid finish. Aftertaste of honey, caramel and spice.

    Being owned by Domaines Barons de Rothschild (of Lafite fame) has been a boon for Chateau Rieussec. Since taking over the property in 1984, the planted vineyard area has increased from nearly 40 hectares to roughly 90 hectares today. Investment has also been made in the cellars, and the winemaking team are now better placed to work with the multiple small lots stemming from various parcels and picking runs through the vineyard. Across the various plots the plantings are broken down as 90% Semillon, 7% Sauvignon Blanc, and 3% Muscadelle, and the wines are aged in roughly 50% new French oak. The chateau also produce a second wine called Carmes de Rieussec, which is subjected to the same rigour in the vineyard and winery as the first wine, however the emphasis with Carmes is more on beautiful aromatics and citrus flavours. Barrels showing more of these traits are selected to be bottled as Carmes de Rieussec after 18 months of elevage.

    2012 challenged all the winemakers in Sauternes, and while the uneven year did not allow for the first wine of Chateau Rieussec to be produced, the best available grapes were used to produce a pleasant, fruity, floral Carmes de Rieussec.

    Other reviews... The 1988 remains a very backward wine. Full-bodied and powerful, extremely rich and dense, it may be the least evolved 1988. The nose offers enticing coconut, orange, vanilla, and honeyed scents. The flavors are highly extracted. The wine's acidity and youthfulness suggest this wine needs another 5-10 years of cellaring. It should keep for 30 years. Last tasted 11/94.

    The 2013 Bastor-Lamontagne has a fresh, vibrant bouquet with scents of pineapple, citrus peel and apple, perhaps a little light and more malic than expected, yet fresh and focused. The palate is expressive and harmonious. There is impressive tension here, the acidity cutting straight though the lightly honeyed fruit, and it finishes in some style, with a long spicy aftertaste. This Sauternes has good potential.

    The 2014 Bastor-Lamontagne has a delightful, quite pure bouquet with wild honey, creme fraiche and white flower scents that are well defined. The palate is well balanced with quince and lychee on the entry, slightly low acidity with toffee apple notes towards the finish that suggest it will mature quicker than its peers. This represents decent early drinking Sauternes. Tasted blind at the annual Southwold tasting.

    The Château Bastor-Lamontagne 2014, which was bought by the Cathiards of Smith Haut Lafitte and the Moulin family last year, is noticeably paler in color than its peers. The nose is lighter than others, but there are attractive lemon curd and custard cream scents to enjoy. The palate is fresh and lively on the entry with orange zest and honeyed tones, somewhat airy for the 2014 vintage, but with satisfying poise on the elegant finish. This constitutes one of the best Sauternes from this estate that I have tasted in recent years.

    Unlike some other 2015s, this Sauternes shows absolutely no bitterness; it's rich round and sweet, with hints of marmalade botrytis. More dense and pure than some recent vintages. About 90% Semillon with 10% Sauvignons Blanc and Gris, but it doesn't have the terroir to give the richness of other properties. Still, a delicious wine, from grapes picked over five tries, but mainly made from the fruit of the second and third passes.

    The 2011 Broustet is rather subdued on the nose with light honey and grapefruit aromas. The palate is medium-bodied with a crisp, orange rind-tinged entry and a harmonious mid-palate. It is very taut, like many Barsacs in 2011, but there is impressive focus and tension, while the finish offers satisfying length and minerality.

    The 2011 Caillou has a light nose of lime cordial and freshly cut Satsumas, and it grows in stature with aeration to reveal subtle tropical notes. The palate is medium-bodied with a viscous entry that is cut through by a silver thread of acidity, rendering the residual sugar barely perceptible. It is extremely taut and focused with a very precise finish. This Barsac second growth has good potential and should drink well over twenty years.

    Remarkably knit and defined already, with bright, mouthwatering peach, apricot, persimmon and piecrust flavors. Long and pure. A beautiful wine. Good to see this estate back in the action. It made a terrific 2001, but has been quiet lately.

    The Château Caillou 2014 is 100% Sémillon and contains 120 grams per liter residual sugar. It has a slightly conservative nose: nothing faulty here but just lacking the breeding of a classed growth. The palate is better with good tension and energy, a little pinched perhaps with a very linear, citrus fresh, almond and pineapple-driven finish. If the aromatics improve by the time of bottling it will deserve a higher score, but I will remain conservative in judgment for now. Drink 2017 - 2030

    A rarity in the area, the vineyard at Chateau Climens is planted to 100% Semillon on chalky limestone, sand and clay soils. Situated in the Barsac area of Sauternes, Climens will display a touch more richness than its Barsac peers, but as always ample sugar is balanced by suitably high acid levels. The wine is aged in 35%-45% new French oak for up to two years depending on the quality and style of the vintage.

    I tasted the 2016 Climens from four separate lots identified by location, harvest dates, alcohol, residual sugar and the percentage each lot represents of the harvest. The four wines were remarkably different. The Nord was both plush and tropical-leaning, yet with notable freshness, while the Sud managed to be both deep and also light on its feet. I found the Ouest to be the most precise and aromatically lifted of the samples, while the Est was the most concentrated. A simple, impromptu blend of the four lots suggests the 2016 Climens is shaping up to be a magnificent Barsac. The interplay of the various components is quite remarkable.

    Tasted single blind against its peers. This has a very well -defined nose of dried pineapple, quince and vanilla pod that unfolds seductively in the glass. The palate is medium-bodied with a mellifluous texture, although there remains some oak that needs to be subsumed into the wine. It displays fine definition towards the finish with impressive length. Always a little curmudgeonly in its youth, this Climens deserves a decade in bottle. Tasted January 2012.

Having conducted this practice over many years, I would point out that whereas in some years one has to conjecture to the full, in 2014 the lots were both smaller in number, less heterogeneous and paradoxically, more "complete". This made it easier to envisage the final wine. Here, you had to focus on the second trie where 80% of the crop was picked with widespread onset of botrytis. There are fleeting senses of dried honey, juniper berries and marigold, dried apricot on a couple of barrels. There is clearly good acidity here, most of the lots spicier than 2013. As usual, this Climens is bestowed a sense of volume and persistence in the mouth and you have the sense that this will be a more approachable Barsac compared to other vintages. Overall, Bérénice Lurton has a winning Climens on her hands, one that will in the top two or three sweet wines of the vintage.

    One extremely fine lot after another, all marked by an extremely pure lemony botrytis. Bright and crisp, with lovely sweetness and mindboggling precision. Choosing between the various barrels to make the final blend will be even tougher than usual this year.

    The 2015 Climens was tasted from different lots (after naughty Bérénice Lurton had successfully duped me with her April Fool's joke by saying that she had done a final blend). The fruit was picked from 8 September until 4 October at 21 hl/ha. The residual sugar is 130 grams per liter this year. Aromas that spring from samples included acacia honey, orange blossom, grapefruit and a little frangipane, all beautifully defined and gaining intensity in the glass. The palate is medium-bodied with a viscous opening, a dash of spice on the entry, lively in the mouth with ginger and a dash of pepper tincturing the honeyed fruit, long and sustained as it fans out with vigor. This is a fabulous Climens from Bérénice Lurton and her team, and as usual, those with wise heads will opt to lay bottles down for 15 years to get the most from this special Barsac. It is destined to be a great Climens - and that's no April Fool's joke.

    A rarity in the area, the vineyard at Chateau Climens is planted to 100% Semillon on chalky limestone, sand and clay soils. Situated in the Barsac area of Sauternes, Climens will display a touch more richness than its Barsac peers, but as always ample sugar is balanced by suitably high acid levels. The wine is aged in 35%-45% new French oak for up to two years depending on the quality and style of the vintage.

    I tasted the 2016 Climens from four separate lots identified by location, harvest dates, alcohol, residual sugar and the percentage each lot represents of the harvest. The four wines were remarkably different. The Nord was both plush and tropical-leaning, yet with notable freshness, while the Sud managed to be both deep and also light on its feet. I found the Ouest to be the most precise and aromatically lifted of the samples, while the Est was the most concentrated. A simple, impromptu blend of the four lots suggests the 2016 Climens is shaping up to be a magnificent Barsac. The interplay of the various components is quite remarkable.

    There was a common theme of spicy, honeyed fruit coming through on both the nose and the palate, one particular lot relatively high in alcohol that should provide the foundation for the more nuances pickings. In many ways, this is a quintessential Climens with subtle orange peel and mandarin notes allied with finely tuned acidity.

    As usual, I tasted through several lots and micro-blends with Berenice Lurton and her team, to ascertain how the final blend will perform, paying particular attention to those that will form the heart of the final wine. For sure, this is going to be a Climens worth seeking out. Berenice is unequivocal that their conversion to biodynamics (to be certified in 2015) played a key role in combating bad rot in the vineyard. It was a late harvest for sure, commencing on October 15 but halted on October 19, when the rains returned.
    It was the north-easterly wind on Sunday, October 28 that saved their vintage – drying out the grapes and over the next three days, when they were able to conduct a blanket harvest as the crop was so even. There is certainly not a mote of grey rot and final yields were a respectable 10 hectoliters per hectare. Berenice was correct – her teams have made an excellent 2012 and I suspect that it will be the finest of the vintage.

    Picked in just two tries, 90% picked in one trie, tasting through 13 separate lots, the core components of a great Climens appear to be in place. Paying particular attention to the lots that constitute a large percentage of the blend (usually around 15%) the common themes are ones of great purity, persistency and precision. The aromatics display pure honey, minerals, occasionally a faint scent of spearmint and white peach, most with spellbinding precision. On the palate, Berenice Lurton has some stupendous lots at her disposal, with ample botrytis, ethereal definition, one or two more powerful, quite spicy lots and others that are shorter and will undoubtedly lend the blend an acidic cut. It will be a joy to taste this after bottling.
