It's a truism that resonates with a small group of 'Macallan chasers' who simply will not settle for less. Our many years of selling fine Single Malt Scotch have acquainted us with several savvy collectors who've patiently acquired bottlings from this Grand Marque over decades. Every so often limited editions and 'antiques' are re-released, some bottlings so rare that they're now difficult to procure even in larger European markets.     This is the third 'Classic Cut' we've managed to secure, part of a limited annual series celebrating Macallan's ongoing commitment to "seek out the extraordinary."While the official distillery website has had these on offer, they obviously didn't produce huge volumes. It's absent from major UK retailer's websites but has popped up at auction where it's already selling for well over AU$200. Our suspicion is that it's being allocated to some markets, not others (cask strength Macallans have traditionally being US exclusives).

     While the 2019 is a very recent expression, the Classic Cuts are true to 'traditional' Macallan form, being matured exclusively in handpicked oloroso sherry seasoned casks from Jerez, Spain. Even better - it's cask strength - a style that's proving increasingly popular with both Macallan loyalists and new drinkers. As with fine wines, we'd recommend giving this whisky a good 15-30 minutes to breathe and open up to show its best. Try it straight, then with a few drops of water. 52.9% Alc./Vol.

    An extremely rare Macallan with a screw cap, distilled in 1963 and filled to 757ml - Old School inside and out! The colour is spectacular.     These old 18 year old vintage dated Macallans are now drying up. This is the first bottle we've been able to source in almost twelve months. In full Sherry form, distilled in the heyday when the majority of Golden Promise barley was still being used and bottled in the 1990s, it's a very tempting collectable. 43% Alc./Vol. One only. Some minor blemishes but overall excellent condition.

    This collectable range of four Macallan variants, recreated by the distillery's master Whisky Maker, reflects the style of The Macallan in the 1920s, 30s, 40s and 50s and the distinctive packaging features a classic mode of travel from each era. Renowned international whisky writer, Michael Jackson, described the series in his Malt Whisky Companion as being ”Amongst the highest of any malts”.

    To recreate the taste of the Macallan as it was in the 1950’s, sample bottles from that decade were opened and their aroma and flavour matched with more recent distillations. During the 1950’s, Spanish oak Sherry casks became available again following the disruption of World War II, allowing the Macallan to revert to using only first and second fill casks. Jim Murray scored the Macallan Fifties bottling 92 points. Other commentators seem to agree: the Fifties bottling foreshadows the classic characteristics of the Macallan we know today making it one of the stand-out editions in the series.

    Other reviews... Nose: Sweetest of the range and the most 'classically' Macallan: toffee (Rolos), crème brulée, chestnut honey, spice, rubber. Figgy and resinous. Palate: Rich slippery texture that coats the mouth. Rich and ripe with spikes of dry spices (nutmeg/cinnamon). Finish: Good length sulphur, oil/ resin, chocolate and bitter orange. Comment: Dry oloroso. 40% Alc./Vol. 8.5 / 10.

    Sitting atop Ruby within the current 1824 series comes "Reflexion".
    Part of Macallan's luxury 1824 Master collection and one of the three pinnacles of the range (the others being 'M' and 'No.6'), Reflexion pays homage to the distillery's signature Sherry-influenced style, drawing on whiskies matured in first-fill sherry hogsheads – both American and Spanish oak. These are smaller casks, which allow for a greater surface area of wood to interact with the spirit.

    When the series was launched in 2013, Macallan revealed it had invested £16 million in Spanish oak over the year. Master of wood, Stuart MacPherson, said: “Wood sits at the very heart of what we do at The Macallan and this range further demonstrates the vital role of our casks in the production of these superb whiskies. Our commitment to sherry seasoned oak casks is unquestionable and the Masters Series showcases The Macallan at its very best.”

    Limited and very collectable, the quality extends into the presentation: the box in itself is quite innovative as it separates to reveal a sleek, tapered-style decanter with silver stopper.

    Notes sourced from Macallan: Nose: Orange and citrus fruits open up like fresh fruit on a sunny market day. Their zest is fresh, the fruit is firm. A slight waxy note fades to fresh green apples. Then the sweet stall: chocolate, thick fudge, boiled sweets, aniseed; caramel toffees almost overwhelm whilst white chocolate truffles are hidden. Just as you are ready to taste, a delivery of bananas in fresh, sweet oak arrives. Palate: Initial light citrus zest with new oak quickly gives way to a juicier sweetness, thick and succulent, of lemon and orange. Raisin, sultana and apple, with a hint of cinnamon and ginger, are subtle. Finish: Boiled sweets add balance to a glimpse of toasted oak to give a medium and soft finish. 43% Alc./Vol.

    This is the newly presented Oscuro with a luxury 'pedestal' decanter bottle packaged in an extravagant 'swivel' box.

    Originally a travel retail exclusive, Macallan Oscuro is a combination of casks filled between 1987 and 1997. The Master Distiller has combined the collectability of Macallan with once trademark, rich, sherried elegance to create a luxurious expression. This was the 'No Age Statement' category runner-up in Jim Murray's Whisky Bible 2011 collecting 95.5 points. See below for an extract from Jim's review.

    Matured exclusively in Sherry wood, this extraordinarily old Macallan will be a show piece for any collection. Heralding from the post war era, it was reportedly made with peated malt due to the high prices of coal at the time, making it all the more unusual.

    Packaged in a handsome top-hinged presentation box, there is pitting to the front plaque, otherwise, this is in excellent condition. We have bottle number 2986.

During the 1930s, with coal in short supply as a result of increasing industrial activity, The Macallan reverted to drying barley using peat fires. This, combined with the scarcity of sherry casks due to the Spanish civil war, resulted in a whisky that was both peatier and less spicy than the modern day Macallan. In his recently released Whisky Bible, Jim Murray scored the Macallan Thirties bottling 91 points, describing it as "...an essay in complexity and balance." Other commentators seem to agree.

    Other reviews... Nose: Seville orange. Fresh leather. Lemon-grass. Peat. Palate: Smooth, sweet. The fruitiest and most estery of the set. Finish: Sweet grass. Juicy. Comment: With its floweriness and a hint of peat, this seems to me a classic old-style Speysider. 40% Alc./Vol. 9.5 / 10.

    According to at least one valuer, "Private Eye is one of THE most sought after bottles of Macallan on the market at the moment."

    1996 was the 35th anniversary of "Private Eye", the UK's number one selling news and current affairs magazine. To commemorate the occasion they commissioned this bottling, exclusively for subscribers. The label features artwork by the magazine's then illustrator, Ralph Steadman, also famous for his work in various wine publications.

    From an outturn of 5000 individually numbered bottles, we have bottle No. 1061. The whisky itself is a vatting of various ages, but includes one cask of 36 year old filled in 1961. Extremely collectable. 40% Alc./Vol.

    A Macallan from the calligraphy label vintage series, distilled in 1940 and bottled in 1981. As Serge mentions below, this is one of the more difficult to find in the series. Comes with original timber crate. As new condition, remarkable given the age of this release. Some minor sediment in the bottom of the bottle. One only to sell.

    Other reviews… This is the famous ‘red stripe and red wax’ bottling. The 1938, the 1950 and the 1957 are pretty easier to find than this 1940. Colour: amber. Nose: ultra-classic honeyed fruits, powerful, very complex, peaty, ample, dense, silky, extremely refined. Very classy. Touches of tiger balm, oriental spices, heather, beeswax, chocolate. There’s a lot of chocolaty sherry. Mouth: a little monolithic, on raisins and coffee, with a little peach and mirabelle, a little kirsch, slightly farmy and earthy, a little rough. Lacks polishing, which is surprising. Finish: long, more elegant, balanced, on coffee and kirsch with a rooty kind of peat. Dark chocolate. Amusing hints of roses in the aftertaste. Comments: a rather rough one, chocolate-forward, peaty, very good.

    These fabulous old Macallans are surfacing less and less frequently. In full Sherry-form, distilled in the heydey when majority Golden Promise barley was still being used and bottled in the 1990s, it's a very tempting collectable. Some scuffing and staining. Just one available.

    Other reviews... Colour: amber. Nose: starts both fresher and fruitier than expected as well as less heavily sherried. It’s more flowery at first nosing, with heavy notes of peony mingling with tangerine liqueur and hints of old roses. Very elegant and very expressive, with a perfect balance. Whiffs of smoke. Gets then more classical with a little oak, raisins, orange marmalade, apricot cake… Also huge notes of ripe mirabelle plums, faint hints of ginger tonic and even grenadine syrup. And ripe strawberries, blackcurrant, prunes, a little toffee… Funny notes of black olives. Top notch. Mouth: a beautifully dry attack, not as sweet and rounded as expected. Lots of tea, bitter caramel, balsamic vinegar… Rather powerful at 43%. Goes on with notes of cake, rum, Smyrna raisins… Not very complex in fact but beautifully compact and ‘crafted’. The raisins grow bigger by the minutes (so to speak). The finish is long, slightly bitter, dry and clean, with hints of calvados and a little salt.     Like many distilleries who made their names producing Sherry barrel matured whiskies, Macallan have accepted that the good old days when Sherry barrels were in such abundance are now well and truly over. Processes to produce Sherried whiskies today involve countless hours of preparation. Before filling, barrels must be seasoned with a lightly fermented wine to rid the harsh tannin in the wood.

    In the circumstance of Macallan, the cask is then seasoned with Oloroso sherry from Spain for roughly two years. These barrels are rented by the distillery for the period. "They literally have us over a barrel," quips past master distiller at Macallan, David Robertson. Given the process, it’s easy to understand why Sherry Matured whisky prices have sky rocketed, perhaps none more so than Macallan. Distilled in 1995.

    The Macallan Distillery was founded in 1824 by Alexander Reid, who had farmed the land around Easter Elchies for some years as a tenant of the Earl of Seafield. In 1841 he was fifty-five years old and lived in Easter Elchies House with his wife and two children. He employed seven men; in the summer they worked the land, and in the winter - the distilling season - they made whisky: around 6,500 gallons in a good year, which meant that Macallan was a medium-sized concern, compared with its neighbours. He sold his whisky locally in stone-ware flagons or 'jars', holding between two and eight gallons, and after the abolition of the glass tax in 1845, some was sold in bottles.

    Filling whisky into glass was still uncommon in the 1850s, and the Macallan 1841 is one of the oldest surviving whisky bottles in existence. The bottles were free-blown, and may be identified by a slight swelling around the base, caused by the glass 'sagging' while it cooled. The glass was always very dark green or brown, owing to particles of iron in the sand used in their manufacture.

    Unlike wine, whisky does not deteriorate in a well-sealed bottle, and such changes as do take place are small and subtle, so long as the bottle is properly stored. So the contents of sealed bottles are more or less the same today as when the bottle was filled. The temptation to find out what The Macallan tasted like 150 years ago {bearing in mind that the 1841 will have been matured for eight to ten years} was irresistible. The original 1841 was nosed and tasted by The Macallan's Whisky Maker, Bob Dalgarno, and his team. The resulting inspiration led to the creation of the Macallan 1841 Replica Malt Whisky. Macallan have gone to great lengths to translate the character and presentation of this latest offering. The surface of the original glass bottle was lumpy in places, and the glass itself had trapped small bubbles; the neck was not straight and the body of the bottle was slightly ovoid. All these imperfections, common to early Victorian glassware, were precisely copied in the replica bottles, which were made by master glassmakers Stolzle Flaconnage of Knottingley, West Yorkshire. The replica bottles were then sealed by hand and finished with a faithfully re-created label, using the hand-lettered style of the original. A wonderful collectors piece for any whisky enthusiast. We have one only to sell.

    Other reviews... Nose: Incongruously, very fresh. Fudge with vanilla essence and pistachio nuts.Palate: Silky. Fresh, appetising. sweet but not cloying. Light, fresh, delicate, notes of orange-blossom honey.Finish: Very gentle acidity gives balancing dryness. Comment: Delicious whisky, of true sophistication and style. Tasted blindfold, it seems a perfect whisky for today, not an evocation of the past. I would re-package it as 2041. - Michael Jackson, whiskymag.com

    During the regular nosing which each cask of The Macallan undergoes to ascertain its individual characteristics, it was found that a shipment of particularly pronounced, resonant casks had created a distinctive, dark and profoundly complex malt whisky, unmistakably The Macallan, but with a strong character and style all of its own. In view of the exceptional character and complexity of the whisky in these casks and the current demand from connoisseurs for rare malts at the very top end, we agreed that Gran Reserva should be bottled as a stand alone malt whisky.

    Named "Gran Reserva" in acknowledgement of its close involvement with the finest sherry, this rare malt has emerged from over 18 years of cask ageing suffused with rich and complex spicy characters, delicious dried fruit flavours with citrus orange set against a background of rich resinous wood lending the whisky a profound depth of character. Gran Reserva's richness of colour, its full, resinous, spicy character and complex fruit flavours mark it out as a malt steeped in the impeccable pedigree of The Macallan, owing much to both its Scottish ancestry and its Spanish oak sherry wood heritage. The design of the Gran Reserva packaging echoes this pedigree and marries classic Macallan imagery with Spanish themes. One bottle only to sell. Excellent condition. 40% Alc./Vol.

    The huge range of Vintage Macallans on offer have been selected from The Macallan distilled in the 1930s and bottled in the 1970s, and also from a selection of the very best casks at the peak of their maturation complexity from the Vintage years 1926 to 1972. In the case of the 1972, twenty nine years old, a mere 128 bottles were produced. Needless to say, this is a collector's Macallan and as such, it is likely that the destiny of most bottles will be to accumulate both dust and value in equal measure, never to be uncorked.     Originally launched in the US in late 2014 with no batch reference, the new look Rare Cask Red is now batch specific, with the first edition released in early 2019. Macallan Rare Cask is drawn from a selection of different hand picked sherry-casks, the majority of which are first fill. The Sherry input is reportedly quite profound, so expect a bigger, richer expression.

    "Whisky obviously has an age, we just don't publicize it here," says Stuart MacPherson, the Macallan Master of Wood. "This is something the whisky industry created in the early 20th century, where we put an age on it to make the whisky easier for the customer to identify. We're taking things a step forward and saying this isn't about the age, it's about what the consumer wants and the skills of the whisky maker."

    While Macallan will not disclose the age of the various whiskies in the mix, their theory is that by not being tied to a number on the label, Master Distiller, Bob Dalgarno can work to taste, not to age, and so do some of his finest work.

    Described by one taster as "a ruby red wow of a whisky" and another as "a Macallan fit for Kings", this certainly seems to have hit the sweet spot for many veterans of the brand on the web. The stunning colour is highlighted by a sculpted, heavy glass decanter and red presentation box.

    Tasting note: [Batch 1 tasted] Deep copper coin colour. Sherried, but not in a profound way, with a little more pepper than the traditional 18YO. Give it plenty of time in the glass to let the aroma fill out. Spice and peel on entry, but gains richness and typical Macallan polish towards the finish: Shortbread, dark chocolate, fruit cake and cinnamon flavours emerge as well as whispers of smoke. Elegant and slightly leaner Macallan. Tastes like some Fino barrels could be in the mix? 43% Alc./Vol.

    Other reviews... [Batch 1 tasted] One of these very embarrassing newish NAS bottlings, ridden with stories about oak and sherry – and laudatory adjectives – but in fact, it’s all a thick smokescreen of claims, there’s nothing certain. Only the price ‘may’ tell us where it sits... But can you trust a price tag? Colour: amber. Nose: an earthy and slightly smoky sherry that reminds me of the older 8 or 12, with raisins, kirsch, Seville oranges, chocolate, chestnut honey and then cinnamon, cloves, mint, and nutmeg. It doesn’t feel very old, but I’d call this ‘classic’. Mouth: indeed, the older 12+. Quite a lot of bitter oranges and honey in the arrival, then this very peculiar toffeeness plus Corinthian raisins, pipe tobacco, liqueur-filled chocolate, and a touch of vanilla fudge. Millionaire shortbread. Good body. Finish: medium, very well balanced I have to say, rather on marmalade this time. Honeyed and moderately spicy aftertaste. Comments: seriously, I think this is very good, and probably much more ‘Macallan’ than other newish bottlings. Great work, only the price is a little, well, you know what a mean.

    Distilled in 1995, this very special limited Edition Macallan is comprised of whiskies aged in first-fill sherry casks (made at the same cooperage, Tevasa, Spain) and so described as a 'single cooperage whisky', designed to ensure the maximum quality oak. Bottled in 2015, it exemplifies the house style. Indeed, the name itself refers to the six pillars of Macallan: "The Spiritual Home, The Curiously Small Stills, The Finest Cut, The Exceptional Oak Casks, The Natural Colour, The Peerless Spirit." This venerable gem is showcased in a six-faceted Lalique decanter. Luxurious both inside and out, expect a stunning Speyside experience with profound notes of fruit cake and orange to the fore. One only to sell.

    Other reviews... A very, very lovely decanter, this one, but no none quite knows what’s inside. Especially not its age, which always leaves us a little uncomfortable when the prices are this high. Unless, of course, the brand is worthy of the highest trust, which only hard facts can either confirm or deny. Oh well… Colour: amber with copper tones. Nose: fantastic! Brighter than the others, fresher, perhaps younger in fact, with superb notes of ripe figs, dried dates, menthol cigarettes, blood oranges, and ‘a little shoe polish for ladies’ pumps’. Also a few old copper coins, dried rose petals, pot-pourri… I find it really very sophisticated. Mouth: some oakiness but all this is very elegant, starting with all kinds of sweet peppers (pink pepper, Timut, Szechuan and all that), a few old cigars that went dry, then we have old oloroso, black chocolate, and quince jelly. Absolutely beautiful. Finish: medium, but fresh and bright, with oriental spices, cedar wood, dried porcinis, dried bitter oranges, and a little verbena and genepy in the aftertaste, which just further lifts it. Comments: one of the loveliest Macallans that I had the opportunity to taste in the, say last five years.

    Notes from Macallan... Spanish oak casks deliver wonderful rich notes, elegant and polished. Raisin, dates and figs dominate like a mountain of fruit; sultana and toffee apples add texture and depth. The weight of flavour practically squeezes the juice from the raisins, dark and rich with great viscosity. ginger and cinnamon gently dance around the edges - the ginger slightly dry, the cinnamon soft. dark chocolate is majestic, whilst vanilla sweetness lingers in the background. Palate: Heavy and sumptuous. Like a rich fruit cake with raisin, dates and figs, apples, sultanas, orange; then ginger, nutmeg, cinnamon and hints of clove. Oak notes are like velvet, soft and chic.     The Macallan Cask Strength was introduced to the USA during 2002 to appeal to both current Macallan drinkers and lovers of cask strength whisky. Macallan Distiller, Bob Dalgarno and his team of nosers laboured long and hard to select the right balance of first and second fill sherry oak casks from Spain that when combined created a Macallan of tremendous strength, power and complexity. Conscious that whisky at natural cask strength of almost 60% abv can be overly pungent Bob has managed to balance the obvious high alcohol with classic clove like spices and dried fruits.

    Macallan's "1824 Collection" consists of four expressions – "Select Oak", "Whisky Maker’s Edition", "Estate Reserve" and "1824 Limited Release". They were created by Macallan’s own whisky maker, Bob Dalgarno, together with John Ramsay of Glenrothes fame (both distilleries are part of the same Edrington group).

    Scheduled for duty free release only, and now largely sold out in Europe, this edition was aged in 5 different types of cask, including American oak seasoned with either sherry or bourbon, and first fill European oak sherry casks. 40% Alc./Vol.

    Tasting note: Brilliant gold. Flawless clarity. An initial whiff of pickled onion blows off to reveal oatmeal biscuit and honey becoming more muesli-like in the second pass. Later inspection accents honey and vanilla over hints of dried fruit. Middle weighted and supple; mid palate features lovely biscuity/fruity malt (think spiced poached pear) plus a late dollop of honey sweetness. Mild pepper and struck match in the finish. Ends light, dry, finely tannic with hints of ginger bread and spice. 40% Alc./Vol.

    Based in the heart of Perthshire and formerly known as 'The Scottish Liqueur Centre', the Morrison & MacKay label is relatively new to the independent bottling scene. Their Carn Mor range is composed of single cask bottlings and is subdivided into the Strictly Limited (mostly bottled at 46%), Celebration of the Cask (bottled at cask strength), and Black Gold (heavily sherried) series. All are non-chill-filtered. The company is also notable for their focus on avoiding unnecessary packaging.

    Centuries of craftsmanship and expertise combine to create another unique addition to the Macallan Replica Series, inspired by the original, first distilled over 150 years ago. Macallan have gone to great lengths to translate the character and presentation of this latest offering. The surface of the original glass bottle was lumpy in places, and the glass itself had trapped small bubbles; the neck was not straight and the body of the bottle was slightly ovoid. All these imperfections, common to early Victorian glassware, were precisely copied in the replica bottles, which were made by master glassmakers Stolzle Flaconnage of Knottingley, West Yorkshire. The replica bottles were then sealed by hand and finished with a faithfully re-created label, using the hand-lettered style of the original. A wonderful collectors piece for any whisky enthusiast.

    Other reviews... Antique Gold colour. The nose displays a wonderful cornucopia of fruits, floral and sweet malted barley. Balanced with light ginger spices, nutty and vanilla toffee. The palate is smooth and unctuous, with malty sweetness and mixed spices of ginger and cloves.     One of seven limited release Macallans have come our way, this one being from cask 04, distilled in 2005 and matured in a European Oak Sherry Butt. Limited to just 561 bottles, it was finally bottled at natural strength on August 2017.

    Created for the United States and parts of Asia, the "Exceptional Single Cask" series was launched in 2017, with all whiskies entirely matured in Sherry-seasoned casks filled between 1995 and 2004 and with age statements ranging from 12 to 22 years.

    Its design includes an advertisement with a strathspey composed by James Scott Skinner (1843-1927).     Dalgarno adds, “I’m a traditionalist at heart and 42.8% is the same as the old 75˚ Imperial Proof – the usual bottling strength before January 1st 1980, when it was dropped to 40%Vol...The bottle does not have an age statement, so I have greater liberty in balancing flavours from various ages - although I have not used any whiskies under about 12 years in this vatting, and there are some much older. Since it’s a one-off, I don’t have to worry about consistency with previous batches. It’s also a challenge making something for Duty Free, where there is such a mix of consumers and palates”

    Normally reserved for travel retail only, we have secured a small quantity of this Macallan one-off release. It comes packaged in a limited edition "X Ray" series box designed by photographer, Nick Veasy.

    Other reviews... Cadbury’s Fruit & Nut Chocolate came immediately to mind when I first nosed this whisky, with distinct spiciness behind. The colour is polished mahogany, indicating the use of European oak casks, and setting up the expectation that it will be a ‘traditional’ Macallan. It does not disappoint! The label describes it as being ‘layered with Fruit and Spice’, and so it is – raisins and sultanas, black pepper and allspice - but all bound up with dry, even powdery, milk chocolate. Water freshens it considerably – oak shavings; tinned pears with sponge – then covers it with melted toffee. The texture is smooth; the taste, straight, is dry overall, after a trace of caramel in mid-palate and some lingering tobacco in the spicy finish. Water adds sweetness, texture and length: a medium to long finish, with some spice and an aftertaste reminiscent of Sticky Toffee Pudding, slightly burnt. - Charles Maclean, Whisky Writer.

    The collectable range of four Macallan variants, recreated by the distilleries master Whisky Maker, reflects the style of The Macallan in the 1920s, 30s, 40s and 50s and the distinctive packaging features a classic mode of travel from each era. The range was rated by Michael Jackson, the renowned international whisky writer, in the Malt Whisky Companion as being ”Amongst the highest of any malts”.

    During the 1940’s, with oak Sherry casks in short supply as a result of the Second World War, Macallan would refill their casks more often than is the current practice. This, combined with the use of peat to dry the barley, resulted in a whisky that was less spicy and peatier than modern day Macallan. To recreate the taste of the Macallan as it was in the 1940’s, Macallan’s Master Distiller sampled bottles from that decade and their aroma and flavour was matched with more recent distillations.

    During the regular nosing which each cask of The Macallan undergoes to ascertain its individual characteristics, it was found that a shipment of particularly pronounced, resonant casks had created a distinctive, dark and profoundly complex malt whisky, unmistakably The Macallan, but with a strong character and style all of its own. In view of the exceptional character and complexity of the whisky in these casks and the current demand from connoisseurs for rare malts at the very top end, it was agreed that Gran Reserva should be bottled as a stand alone malt whisky.

    Named "Gran Reserva" in acknowledgement of its close involvement with the finest sherry, this rare malt has emerged from over 18 years of cask ageing suffused with rich and complex spicy characters, delicious dried fruit flavours with citrus orange set against a background of rich resinous wood lending the whisky a profound depth of character. Gran Reserva's richness of colour, its full, resinous, spicy character and complex fruit flavours mark it out as a malt steeped in the impeccable pedigree of The Macallan, owing much to both its Scottish ancestry and its Spanish oak sherry wood heritage. The design of the Gran Reserva packaging echoes this pedigree and marries classic Macallan imagery with Spanish themes.

    John McWilliam established his business in Speyside during the middle of the 19th Century and his shop was a familiar landmark until the beginning of the 20th century. As well as purveying general provisions, such as groceries, tea and coffee, he offered a list of fine wines and spirits which he bought by the cask and bottled himself. The Macallan distillery located close by on the opposite bank of the river Spey was the local favourite and a handful of his bottles still exist in the Macallan archive collection. The earliest bottle dates from 1856 and the latest from 1898.

    In 1998 The Macallan acquired a very rare bottle of 1861 from John McWilliam’s private collection and presented Bob Dalgarno, Whisky Maker, with the formidable challenge of replicating it.
    "I drew a tiny sample from the bottle with a hypodermic syringe inserted through the long driven cork. It was surprisingly fresh and vibrant, clearly The Macallan, but full of youthful vitality. Of course, we do not know the age at which it had been bottled, but judging from its golden colour and relative robustness in character, we suspect the whisky was matured in oak sherry casks from Spain. Together with my team of expert nosers, I began to comb through our warehouses of maturing casks searching for whisky which matched the profile. The problem was that every time we went back to the original it seemed to be revealing new layers of complexity. In the end we vatted together twenty-eight casks, at different ages, to achieve a balanced profile which, in our view, reflects the true character, aroma and flavour of this historic whisky."

    As well as replicating the whisky, Macallan were determined to recreate the 1861 bottle and label. The original bottle had been hand blown and closed with a driven cork and lead capsule - all characteristic features of its age and provenance. Master glassmakers, Stölzle Flaconnage of Nottingly, West Yorkshire, fabricated a new mould and carefully added colour to the molten glass until it matched the original. Even the flaws in the 1860s bottle were replicated, but in a way which maintained the integrity of the glass. No two bottles are the same, with bubbles, scratches and flat spots randomly created.

    Of this rare bottling, Macallan Chief Whisky maker, Bob Dalgarno offered the following tasting notes: "The nose displays citrus, dried fruits with spice and is lightly floral with hints of toffee, wood smoke, apple, light oil and malt. The palate reveals spice, light lemon-citrus, resin and lightly smoked oak flavours with hints of toffee re-emerging. Lingering slightly sweet aftertaste of spice, subtle smoked wood and malt. 42.7% Alc. / Vol.

    Meanwhile, noted Whisky writer, Michael Jackson commented:
    " [The palate is] slippery-smooth. Very sweet. Perfumy. Anis. Restrained fruitiness. Candied orange peel. Delicious sherry character. Great depth of flavour. Quite an achievement. Like the previous ‘replica’ edition, this is more delicate than the robustly sherried Macallans of today."

    Further notes sourced from www.tastings.com: Rich copper hue. Sweet fruity nose with a splash of toffee. A buoyant, satiny entry leads to a medium-to full-bodied palate of caramel, pepper spice and chocolate fruit peels. Finishes with a fruity fade of nuts and spice. Deeply flavorful and very well-balanced.

    Other reviews... Another of the Fine Oak series (aged in both bourbon and sherry casks), which will debut in the U.S. in March. Of the five Fine Oak expressions that will be in the U.S. (10, 15, 17, 21, and 30 year old), this is my favorite, slightly besting the 15 year old. Lovely sweet notes (creamy vanilla, light toffee, marshmallow, shortbread, and a kiss of honey) are accompanied by bright fruit (multi-layered citrus) and potpourri of dried spices, along with a hint of nut and wisp of smoke. A very refined and sophisticated whisky.

    The luscious Speyside bouquet offers layers of aromas that include smoke, wood, touches of palm oil, browned butter, vanilla bean and pork rind. The palate entry is rich, bittersweet, caramel-like and creamy; at the wonderful midpalate the taste turns sweeter, nuttier and more fudge-like. Finishes elegantly, yet very focused, and integrated.     Why Whisky Drinkers Should Drink More Sherry.

    Originally, the Scots relied solely on oak trees from the forests of England to create casks and mature their whiskies. But at some point, Scotch whisky distilleries needed to find an alternative source for their oak as their markets expanded. As it happened, Sherry was in abundance and highly fashionable with the English drinking public, who consumed roughly 30% of the world's total Sherry production. So Sherry casks seemed a logical alternative for the Scots. But transportation of Sherry-filled casks was a costly and laborious process (usually done by horse and cart), and understandably, it wasn't viable for the Spanish to re-acquire the barrels once emptied. Fast forward to current times and the opposite has occurred as the worldwide demand for Spanish Sherry has dramatically declined. This has turned the Scotch whisky industry on its head with fewer Sherry barrels becoming available.

    What partly makes Spanish Sherry barrels so special is the oak itself, Quercus Robur, with the Spanish trees cut down at 60 to 70 years of age. Research has shown that tannins in the wood act as a catalyst that aids oxidization during the maturation period hence being a highly desirable commodity in malt whisky production. The old Spanish timbers contain approximately ten times more tannin than the 30 to 40 year-old Quercus Alba, or American White Oak that is used to make barrels for the maturation of Bourbon whiskey. The deep colour and distinct rich, fruity / citrus peel flavours (sometimes marmalade-like) that ex-Sherry casks can impart are more obvious reasons for their value and preference by the Scots.

    The present day process for acquiring Sherry barrels into Scotland is unusual, a result of the fundamentals of supply and demand.  Sherry houses are commissioned to produce Sherry for the sole purpose of selling what they would consider a 'by-product' - essentially a first-fill barrel with a life expectancy of two fills. The process is as follows:
    1. Trees are purchased from Northern Spain allowing two years after felling and being left in the open for natural chemicals in the wood to interact and for the moisture content to drop.?
    2. The wood is commissioned for cooperage by Whisky producers.
    3. Sherry (usually Oloroso) must then be 'leased' by the Whisky producer for a minimum of two years in order to season the barrel.

    In comparison, the average price of filling a Bourbon cask is $45 compared to an astounding $300 per fill for the Sherry; also bear in mind that usual life expectancy for Bourbon barrels is three fills as opposed to two for Sherry.'They literally have us over a barrel,' quips past master distiller at Macallan David Robertson.

    Enter again the Scots looking for a bargain!  For some time know, the Scots have been seeking alternatives to Sherry casks. Charles MacLean explains how American ex-bourbon casks came to dominate the present industry. In this book “Scotch Whisky, a Liquid History”, he describes how “In 1936, the cooper’s unions in the US broked a deal with [American] whisky makers which insisted that Bourbon must be filled into new oak, so there was suddenly a large surplus of cheap American barrels. These started to arrive into Scotland in 1946, either intact or broken down into ‘shooks’ of staves and reassembled into traditional Scotch (200L) hogsheads...The whisky industry thus kept pace with demand by embracing  changes in production methods which were compatible with efficiency and productivity.” Output increased exponentially (this in turn led to oversupply problems in the next decade).?

    100% Sherry cask matured whiskies are now rare. Unless whisky lovers take up drinking Sherry themselves, it’s not hard to envisage that in the near future, supply and demand will send prices skyward. Expect to be paying much, much more for these historical curios in the years to come - if you can find them at all.

    As die-hard Sherry heads well know, 100% Sherry Matured Macallan is not officially imported into Australia anymore. Our sources inform us that these whiskies will never be available on a regular basis. Our advice is to stock up!

    Originally available in the UK and parts of Asia, the "Exceptional Single Cask" series was launched in 2017, with all whiskies entirely matured in Sherry-seasoned casks filled between 1995 and 2004 and with age statements ranging from 12 to 22 years.

    Distilled in 2004 and bottled in December 2017 after maturation in a European Oak Sherry butt, Exceptional cask No.8 was finally bottled at natural strength with a very modest outturn of just 304 bottles. Easily one of the deepest, darkest colours of any in the series so far, indicating massive sherry input. One only to sell.

    From the producer... Nose: Citrus fruits, lemon and orange, sweetened with hints of raisin. The orange notes become more prominent with oak developing.
