New Claxton's Warehouse Releases

Claxton’s latest Warehouse No.1 outturns feature a Bordeaux red wine cask matured 27 year old Glen Moray and a massively aged Grain from a PX Sherry cask, amongst many others. Cask types range from STRs, through to Ruby Port and PX and Oloroso casks. Warehouse No.8 adds to the diversity with smaller cask releases - most limited to around 60 bottles. Taking a leaf out of Duncan Taylor's book, the practise is based on the simple premise that there is more wood interaction with whisky over a shorter period of time in a small cask than in a large cask. 'Octave casks' are typically made from staves of a previously used sherry butt and are approximately one-eighth the size of a butt (around 100 litres). Increased interaction between the wood and the spirit gives the whisky a greater depth of flavour and aroma in a shorter period of time. Claxton's have chosen to almost exclusively work with Oloroso and Pedro Ximenez sherry. For obvious reasons, these bottlings are especially limited.
