    An exclusive experimental release of only 250 bottles: Patient Wolf Summer Thyme Gin was rested in an x Chardonnay French Oak barrel for seven months which had previously been used to age Chardonnay and then Brett Saison Beer. Earthy spice, honey and candied citrus feature in a delivery that's almost violet-crumble like. High ABV, yet incredibly smooth, the French Oak wood has contributed colour, sweetness, weight and texture. 48% Alc./Vol. Very limited stocks.

    This Sardinian craft gin from Zeddiani was barrel aged for 12 months in chestnut barrels that previously held Vernaccia di Oristano wine. Besides juniper, myrtle, thyme, fennel, sage and lemon peel are added to the infusion.

    Tasting note: Pale straw-gold. Crushed pine buds, light thyme and lemon oregano aromas. Oily entry offers hints of anise and dried herbs, building with peppery warmth. Delicate juniper rounds off an elegant and attractive lighter style. 40% Alc./Vol.

    An aged Gin that references the barrels and blood spilt back in the days of prohibition. This project has been quietly maturing since co-founders Adam Carpenter and Wes Heddles opened at the company’s Gilbert St distillery. They had x Bourbon barrels that had recently being emptied of Barossa Shiraz, re-coopered into a smaller format then re-charred to restore their toasty character.

    The resulting gin is a big, bold, barrel strength style retaining a gentle shiraz note along with a rich oaked rye back note. Following the trade launch, Carpenter commented, "everyone loved the flavour, the complexity and how different it is to anything else out there, it’s not like any other shiraz gin as there’s no fruit contact, but it’s not your average barrel aged either.”

    Recommended with soda, in a classic Negroni, gin Old Fashioned or Boulevardier. 60% Alc./Vol.

    Tasting note: After ten months inside a 300-litre French oak x McLaren Vale Muscat barrel, the result isn't as sweet as you might expect. Fairly traditional aromas arrive with a fresh and fruity lift, like some novel gin cocktail - you also get a little dried fruit character on the palate, moderated by hints of spiced citrus, cough lozenge and lemon chutney. Over ice, a nice medley of flavours or try it in a Gin New Fashioned. 43.4% Alc./Vol.

    Started with a small life savings and a fistful of credit cards, the Ransom Project was launched in 1997, with the distillery making small amounts of grappa, eau d'vie and brandy. Gin and whiskey were added to the lineup in 2007. Their Old Tom Gin is a historically accurate revival of the predominant Gin in fashion during the mid 1800's and the golden age of American cocktails. It's a slightly sweeter rendition of the classic London Dry.

    Ransom's recipe was developed in collaboration with historian, author, and mixologist extraordinaire, David Wondrich. Old Tom is the Gin for mixing classic cocktails dating from the days before prohibition. Its subtle maltiness is the result of using a base wort of malted barley, combined with an infusion of botanicals in high proof corn spirits. The final distillation is run through an alambic pot still in order to preserve the maximum amount of aromatics, flavour and body. Only the "heart of the hearts" (the very best portion of distillate) is retained for this special bottling. The distillate is then cask aged for three to six months - sometimes longer. Six botanicals are used: juniper berries, orange peel, lemon peel, coriander seed, cardamom pods and angelica root.

    Tasting note: Brilliant amber gold with a coppery blush. Delightful, lifted bouquet offers up lemon barley sugar, sweet oregano, sage and hints of juniper. Light, creamy entry. A subtle amalgam of coriander seed, cardamom, raw root vegetable with gently peppery juniper to finish. Wonderfully soft. A barrel aged cross-genre style that's not as sweet as you'd expect. Beautifully done.44% Alc./Vol.

    Other reviews...Pale amber pink color. Aromas of sweet berry and citrus pastry, floral hops, honey and spice follow through on a soft,silky entry to a dry-yet-fruity medium-to-full body with wintermint, mango custard, dried lavender, and herbal juniper and sweet spices on the gentle polished finish.     Tasting note: Matured in ex-Martinborough Pinot Noir French oak barrels for three months, this amber gold expression slightly tames the herbaceousness of the distillery's 'Native' gin. Thyme, lemon oregano and tarragon feature on the nose along with hints of Summer pudding. There's an appealing cough lozenge character on the palate, with dried herbs and pepper accented at the finish. 42% Alc./Vol.

    A triple distilled, small batch gin made from grape spirit and local botanicals including native cranberry and saltbush. The brand pays homage to the region's first settlers. The producer's aim for this expression was to add structure to the gin without reducing the clarity of the botanicals.

    Tasting note: [BATCH 1401] Bright gold. Initial inspection conjures a curious medley of baked citrus, potpourri and rose-scented furniture wax. Light to medium bodied with subtle juniper and pine needle-like flavours and hints of peppermint and liquorice in the finish. Relaxed in the mouth with time in barrel muting the spices. The gin character is retained, though even less time in oak might be desirable? 43% Alc./Vol.

    This chardonnay macerated gin has been aged in a Voyager Estate MJW Chardonnay barrel and infused with a unique blend of botanicals from Margaret River. Whole bunches of freshly picked Chardonnay grapes from Voyager Estate have been macerated for three months in a Juniper spirit, before being blended with individual distillations of Christmas Tree flower, Geraldton Wax, Red Samphire, Finger Lime and Coriander.

    This is the first time Christmas Tree flower been used in a spirit. This ancient bush tucker, which is endemic to the southern parts of Western Australia, has an enticing earthy and honeysuckle undertone. The Geraldton Wax imparts a liveliness with fresh forest aroma that develops with lemongrass and citrus, while there's a warming saltiness from the Red Samphire. The final maturation in a French oak barrique contributes a golden hue.

    Hand bottled as a run of 350 bottles, this textural gin tastes like Christmas captured in a bottle. It has a complex and feminine bouquet, with vanilla bean and floral notes reminiscent of a Summer’s day. A honeysuckle sweetness, delicate citrus and fresh forest accents linger on the palate, with a warming saltiness and a velvety mouthfeel. Best enjoyed over ice, as a martini, or with a tonic mixer. Garnish with dehydrated grapefruit or orange. 40% Alc./Vol.

    Tasting note: This is the distillery's regular gin, aged in ex-whisky casks for over a year, then infused with laminaria seaweed (kombu). The result has a bouquet suggesting green balsa wood, thyme, lemon grass as well as hints of sea breeze, but with a stronger citrus accent in the mouth. In fact, the wood input is slight. Instead, you get flavours of lemon chutney and juniper combined with frail salinity, finishing with a refreshing astringency. Other botanicals include cassia bark, licorice root, lemon peel, bitter orange peel, cubeb berry and grain of paradise. 47% Alc./Vol.
