La Combe; a tiny hamlet above the village of Rotalier is home to the larger-than-life “Fan Fan” Jean-François Ganevat. Jean-François came back to run the family estate in 1998 after ten years working Burgundy and he combines his passion for the Jura terroir – here ideal for Chardonnay and Pinot Noir - with a staunch defence of Burgundian techniques; low yields and most recently biodynamic methods for which he has now gained Demeter certification.
In addition to the ‘Estate’ wines there are, since 2013, a group of wines made from grapes purchased from around the region and in others, all are grown by their vigneron friends to their standards, so organic or bio-dynamically farmed and tended. They pay very high prices to get the quality they want. Each of these necogiant wine are made on the property by Jean-François and his small team; from grapes into wine, and have the same Ganevat precision, levity and exquisite texture despite the differing origins of the grapes.
A sparkling crémant made of 100% Chardonnay, from vines farmed organically and harvested by hand. After direct pressing, the wine is matured 24 months on its lees, then bottled for the secondary fermentation: the "prise de mousse" in the bottle. New technology, changing consumer values and a willingness to abandon tradition has not only multiplied the creative options available to wine label designers, but has frequently led to 'over-packaging'.
The extravagant presentation of Armand de Brignac has given some critics pause for reflection, one commenting “...the luxuriousness of the package made me afraid I’d subconsciously find the Champagne amazing simply because of its bottle.”
Produced by Champagne Cattier, the brand's first bottling was introduced in 2006 and is identifiable by its distinctive gold bottle with pewter Ace of Spades labels. Like Krug, the Brignac's Brut Gold is a multi-vintage style sourcing fruit from both Premier and Grand Cru vineyards. Two other cuvées, a Rosé and a Blanc de Blancs were released in 2008. An appearance in the Jay-Z music video of "Show Me What You Got" prior to the launch of the Armand de Brignac brand sparked wide discussion on sites covering hip-hop and popular culture, following Jay-Z's public fallout with the makers of Cristal Champagne. As a result, Mr. Cattier's brand received more publicity in two weeks than it had in two decades. "I would have never imagined a few months ago that we'd become part of this mysterious and exclusive rap world," he said. "Jay-Z is a remarkable man. I'd like to invite him here to visit the winery."
Subsequent tastings by international wine critics have acknowledged Armand de Brignac as one of the world’s top Champagnes, though it comes with a price to match.

Arras Brut Elite Rose SparklingTasmania, AUSTRALIA$59. 99Bottle$719.88 DozenABV: 12.9%Closure: CorkIn 1995, Ed Carr's vision of crafting world-class sparkling wine led him to Tasmania, where he founded House of Arras. The cool climate, pristine environment, and ancient soils make it an ideal location for producing top-quality sparkling wine. The Brut Elite Rosé is a blend of 64% Pinot Noir, 27.4% Chardonnay, and 8.4% Pinot Meunier, sourced from the Derwent and Coal River valleys, the Tamar Estuary, and Pipers River. Pinot Meunier adds texture to the mid-palate, while Pinot Noir brings bright red berry flavors. This cold climate sparkling wine showcases beautiful complexity and structural elegance.

I like the complex nose with toasted almonds, strawberries, red cherries and wet stones, as well as light herbs and gentle spice. The fleshy palate has succulent red-fruit flavors and light, nutty complexity. Bold, pinot-driven style here. Transfer method with sourcing from right across Tasmania. Drinking well now.

Trophy winner at the Tasmanian Wine Show '17, two-thirds pinot noir, and spent 7 years on yeast lees. Like all Arras wines, it has an extra level of textural and flavour complexity derived partly from the fruit, partly from extended time on lees, balanced by tangy acidity. Drink by 2026.

William Kelley - Wine Advocate (May 2020)A blend from seven grand crus across the Montagne de Reims and Côte des Blancs, this is dry in the classic Ayala style. Its freshness has been tempered by bottle aging although it is by no means mature and still has taught acidity. The mineral texture of the Chardonnay is balanced by the riper structure of the Pinot Noir in an impressive wine. Drink from 2021.

Other Reviews….
While we have been able to enjoy Australian-made prosecco rose for a couple of years, the home of the grape – Italy – approved production only last year. The wait, it must be said, has been worth it.
BABO is claiming bragging rights as one of the first prosecco roses to be available in Australia and, what’s more, that it has been made to suit Australian tastes in that it is a brut style (ie. less than 12 grams of sugar/litre).
To label a wine Prosecco rose D.O.C., producers are obliged to follow a number of rules, the most important relating to the grapes. The only grapes permitted are glera (originally called prosecco) and between 10-15% of the red pinot nero (pinot noir) grape which provides the blush. I like the concept of a vintage prosecco rose, it not only gives extra cred to prosecco and the house style but ensures a potentially longer ageing – and therefore drinking – period. The clear bottle is marketing gold. The wine’s pretty pale, dusty pink blush will walk off the shelves once drinkers catch an eye full. It’s reassuringly classy to look at. Ditto the taste. This is a delicate sparkling with a pulsating bubble, intense mousse and the lifted scent of musk, nougat, strawberry and red berries. Juicy to taste with a light, fruit tingle sweetness amid the musk-confection, red fruits and nougat. So fine it almost melts in the mouth with a brisk, fine-edged acidity. And it’s well-priced.
Molto bene!

[tasted 2016] True to the character of Coonawarra cabernet, this is a cuvee that sings with all the complexity of deep reserves, a blend from '14 back to '95. Black- and redcurrant fruit meets dark chocolate and notes of red capsicum on a long and bright finish. Firm, fine tannins are well handled and promise a long future. A standout in the sparkling cabernet stakes.
92 points - James Hallidays Wine Companion First tasted August 2007 This wine should impress, but fails to do so – the base wine has been blended from 8 vintages of Reserve wines and kept on lees for 5 months. The wine starts badly, there is virtually no mousse and very little bead – in fact it could barely be described as being spritzig. Deep crimson colour with deep crimson hue. Hints of chocolate and spice on the nose, with a slight effervescent sensation on the palate. Dry tannins overwhelm the fruit component. Aftertaste of plum and stewed fruit.

Light with a subtle creaminess in the mouth the palate has good mid palate richness with flavours of citrus, toast, delicate honeyed characters, yeast lees and a touch of breadiness. Finishes dry with vibrant acidity and a bready aftertaste of citrus, toast, yeast lees and cashew.

Pipers River pinot noir from four rows of vines, fermented in eight-year-old barrels with 100% mlf. Early picked for the aromatic purity it provides, and it really shows. A beautiful salmon hue with a fine energetic bead and mousse, stunning aromatics of redcurrant, wild strawberries, red apple and raspberry with notes of mushroom broth, fresh pastry, crushed river stone and light creamy notes. Super savoury and pure, gentle tannin texture from the barrel ferment and a long, harmonious finish. Gorgeous drinking. Drink by 2033.

Benedicte et Stephane Tissot Indigene Cremant du JuraJura, FRANCE$94. 99Bottle$1139.88 DozenABV: 12.5%Closure: CorkStéphane Tissot is a tireless and vigorous promoter of individual sites and natural wines. He brings technological experience from his work in Australia and South Africa, and combines this with his ruthless yield reduction philosophy and very serious 'small batch' winemaking which is carried out as naturally as possible. Tissot plants mostly on clay and limestone, all sites are farmed biodynamically and yields are kept low, averaging only 30 h/l per hectare. Ferments are allowed to commence naturally and the still wines are bottled without filtration and little or no SO2 is added across the board. Vibrancy and fruit presence is a signature across all his wines. Given Stéphane is constantly experimenting and obsessively seeking improvements; he is at the forefront of the Jura revolution and produces terroir-driven wines of depth, intensity, interest and undeniable quality.
While Stéphane Tissot is widely praised for his terroir driven expressions of Vin Jaune among the other wines from his home in the Jura, this sparking is no afterthought on his part. Indigène Cremant du Jura is a serious effort deserving to be mentioned alongside the finest grower Champagnes of France. Based on the 2018 vintage, the blend is 50% Chardonnay, 40% Pinot Noir, 5% Poulsard, and 5% Trousseau, and was bottled with no dosage in June 2021.
Other Reviews....
The sparkling 2018 Crémant du Jura Indigène is a blend of 50% Chardonnay, 40% Pinot Noir and 5% each Poulsard and Trousseau fermented in equal parts in tank and wood. The second fermentation in bottle was produced adding unfermented vin de paille (sweet) and vin de paille in fermentation (yeasts). This wine is sold without any added dosage and very low sulfur. It has a copper-like color, like a blanc de noirs, and a very expressive nose, very floral (orange blossom), with some vin de paille echoes. It's a serious sparkling wine, elegant with finesse and nuance, nicely balanced and with very small bubbles. This is simply fantastic. Drink 2021 - 2026.

The NV (2013) Extra Brut Cuvée La Rue des Noyers Non-Dosé is a rich, ample wine built on texture and layers of deep, resonant fruit. From the very first taste, the 2013 shows itself to be a Champagne of real breadth. Hints of orange peel, roasted nuts, minerals, ash, chamomile, dried flowers and spice all flesh out in the glass. A deceptively mid-weight wine, the 2013 is enveloping in feel, but also has softer contours than the more explosive 2012 tasted alongside it. This is all finesse. Disgorged: April 2016. Non-dosé.

The quality starts with thoughtful viticulture and low yields from a high percentage of old vines many planted in the 1960s and 1970s. Since the brothers took over the operation from their father in 2004, all chemical herbicide use was stopped and returned to labour intensive manual cultivation of their vines. In the cellar they employ long, natural fermentations and extended aging on lees. Parcels are vinified separately, and three-quarters of the production spends time in 350-litre barrels, while the reserve wines are held in demi-muids of 600 litres. Unusually, bottle aging is mostly under cork for the second fermentation (tirer à liege). The brothers believe this allows slightly more oxygen to get to the wine, resulting in Champagnes with finer bubbles and seamless texture. None of the wines go through malolactic fermentation. Bottling occurs without filtration and disgorgement is still done entirely by hand.

The 2013 Premier Cru Le Cran is showing especially well, bursting with aromas of pear, mirabelle, crisp yellow orchard fruit and blood orange, complemented by hints of buttery pastry. Medium to full-bodied, layered and multidimensional, it's concentrated and intensely saline, concluding with a long, mineral finish. The late 2013 harvest has lent an exotic quality to the fruit tones this year that's very appealing, especially since Champagne hasn't seen to late a harvest in any of the years that have followed. This bottle was disgorged in July 2020 with three grams per liter dosage. Drink 2021 - 2035.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.
The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
