    A fine, plentiful mousse shows ample volume over a pale straw, golden edged base that’s finely threaded by a persistent bead. Rich and expressive the nose offers up classic aromatics of baked bread, cashew and yeast lees with faint toast and honeyed almond notes also present. Rich and voluminous yet possessing a mouth watering freshness, the palate is filled with yeast lees, roasted almonds, baked bread, honeyed citrus and creamy cashew characters. Fullish with an oily like textural feel finishing dry with crisp acidity and a long aftertaste.

    Established in 1920 the Bauchet family estate covers 34 hectares spread out on 7 different terroirs. The vineyards are located in the Côte des Blancs, the Montagne de Reims and in the Côte des Bar. These direct imports are a great alternative to the big houses of Veuve Clicquot, Moet & Chandon and the like, with their distinctive packaging, quality and keen pricing making them exceptional value for Premier Cru Champagne.

    A blend of 80% Chardonnay and 20% Pinot Noir (of which 20% are reserve wines) sourced from Bauchet’s premier cru vineyards located in the Cotes des Blancs and Montagne de Reims. The wine is aged for a minimum of 36 months on lees before being disgorged.

    Fluffy white, the mousse shows good hold over a pale straw coloured base that has tinges of pale gold around the edges. Very fine and persistent bead. The nose dispels top notes of yeast lees and citrus, with baked bread, light pear and traces of apple also chiming in. Graceful with a light oily feel, flavours of baked bread and yeast lees dominate over pear, citrus and faint cashew. Finishes dry and crisp with a lengthy aftertaste.

The nose has a shade more intensity than its non vintage cousins and shows more classical Champagne aromatics of baked bread, cashew and yeast lees with lightly toasted brioche end notes. Rich and creamy in texture the palate has mouth filling flavours of baked bread, brioche and yeast lees over some cashew and light toast. Clean dry finish. Excellent length with a long aftertaste of yeast lees, baked bread, cashew and brioche.

The nose displays yeasty top notes followed by some grapefruit and citrus. The palate possesses a creamy mouthfeel with flavours of yeast lees and cashew followed by some baked bread and roast almond characters on the back palate. Clean crisp finish with aftertaste of yeast lees and roasted almond characters.

    Matured for an average of 3 years on lees. Pours nicely with a very frothy mousse that shows excellent hold. Pale straw coloured base threaded by an exceptionally fine bead that shows great persistence. A touch restrained the nose displays subtle pear and citrus aromas which merge with light toast and sherbet notes. Light with a subtle creaminess in the mouth the palate has good mid palate richness with flavours of citrus, toast, delicate honeyed characters, yeast lees and a touch of breadiness. Finishes dry with vibrant acidity and a bready aftertaste of citrus, toast, yeast lees and cashew.

    An elegant, racy Tassie Sparkling that has a sculptured feel.

    A blend of 60% Chardonnay and 40% Pinot Noir aged for 3 years on lees. Pours with a fine plentiful mousse that slowly subsides into a pale straw coloured base that has a nibble stream of tiny bubbles coursing through it. Elevated citrus, baked bread and yeast lees aromas fill the nostrils with hints of dried honey and cashew also evident. Elegant baked bread and yeast lees flavours are underpinned by crisp lemony acidity which imparts a tense chalk tinged feel. Delicate green apple and mineral elements sit in the background.     Made from Pinot Noir this sparkling rose pours with a buoyant mousse and a salmon pink tinged base that has a steady stream of tiny bubbles flowing through it. Aromas of winter strawberry and peach are interwoven with baked bread, yeast lees and raspberry notes. Tense and vividly sculptured by racy chalk tinged acidity, flavours of winter strawberries, red cherries and citrus over shadow oyster shell and mineral undertones. Finishes very dry, crisp and elegant.

    Pipers River pinot noir from four rows of vines, fermented in eight-year-old barrels with 100% mlf. Early picked for the aromatic purity it provides, and it really shows. A beautiful salmon hue with a fine energetic bead and mousse, stunning aromatics of redcurrant, wild strawberries, red apple and raspberry with notes of mushroom broth, fresh pastry, crushed river stone and light creamy notes. Super savoury and pure, gentle tannin texture from the barrel ferment and a long, harmonious finish. Gorgeous drinking. Drink by 2033.

    Stéphane Tissot is a tireless and vigorous promoter of individual sites and natural wines. He brings technological experience from his work in Australia and South Africa, and combines this with his ruthless yield reduction philosophy and very serious 'small batch' winemaking which is carried out as naturally as possible. Tissot plants mostly on clay and limestone, all sites are farmed biodynamically and yields are kept low, averaging only 30 h/l per hectare. Ferments are allowed to commence naturally and the still wines are bottled without filtration and little or no SO2 is added across the board. Vibrancy and fruit presence is a signature across all his wines. Given Stéphane is constantly experimenting and obsessively seeking improvements; he is at the forefront of the Jura revolution and produces terroir-driven wines of depth, intensity, interest and undeniable quality.

    While Stéphane Tissot is widely praised for his terroir driven expressions of Vin Jaune among the other wines from his home in the Jura, this sparking is no afterthought on his part. Indigène Cremant du Jura is a serious effort deserving to be mentioned alongside the finest grower Champagnes of France. Based on the 2018 vintage, the blend is 50% Chardonnay, 40% Pinot Noir, 5% Poulsard, and 5% Trousseau, and was bottled with no dosage in June 2021.

    The sparkling 2018 Crémant du Jura Indigène is a blend of 50% Chardonnay, 40% Pinot Noir and 5% each Poulsard and Trousseau fermented in equal parts in tank and wood. The second fermentation in bottle was produced adding unfermented vin de paille (sweet) and vin de paille in fermentation (yeasts). This wine is sold without any added dosage and very low sulfur. It has a copper-like color, like a blanc de noirs, and a very expressive nose, very floral (orange blossom), with some vin de paille echoes. It's a serious sparkling wine, elegant with finesse and nuance, nicely balanced and with very small bubbles. This is simply fantastic. Drink 2021 - 2026.

    The NV (2013) Extra Brut Cuvée La Rue des Noyers Non-Dosé is a rich, ample wine built on texture and layers of deep, resonant fruit. From the very first taste, the 2013 shows itself to be a Champagne of real breadth. Hints of orange peel, roasted nuts, minerals, ash, chamomile, dried flowers and spice all flesh out in the glass. A deceptively mid-weight wine, the 2013 is enveloping in feel, but also has softer contours than the more explosive 2012 tasted alongside it. This is all finesse. Disgorged: April 2016. Non-dosé.

    The 2013 Premier Cru Le Cran is showing especially well, bursting with aromas of pear, mirabelle, crisp yellow orchard fruit and blood orange, complemented by hints of buttery pastry. Medium to full-bodied, layered and multidimensional, it's concentrated and intensely saline, concluding with a long, mineral finish. The late 2013 harvest has lent an exotic quality to the fruit tones this year that's very appealing, especially since Champagne hasn't seen to late a harvest in any of the years that have followed. This bottle was disgorged in July 2020 with three grams per liter dosage. Drink 2021 - 2035.

    The 2013 Le Cran is a powerful, heady Champagne. Creamy and resonant in the glass, the 2013 possesses tremendous volume that only builds with time in the glass. Apricot, dried pear, spice, cedar, chamomile and lightly honeyed notes all flesh out as this dramatic, vinous Champagne gradually reveals its many charms. It is a very typical wine from this late ripening year with both intense fruit and bright, salivating acids. Dosage is 3 grams per liter. Drink 2021 - 2030.

    Disgorged in May 2019 with 4.5 grams per liter dosage, the 2015 Brut Rosé Campania Remensis is showing brilliantly. From a south-facing site characterized by sandy soils over limestone bedrock, it wafts from the glass with a beautiful bouquet of pear, red apple, fresh mint and pastry cream. On the palate, it's medium to full-bodied, pillowy and charming, with a crisp core of fruit, a delicate mousse and fine-boned structure. This is one of the finest rosé wines I've tasted from Bérêche.     The 2014 Campania Remensis offers notable tension and along with a good bit of vibrancy that livens up the red berry, tobacco and floral notes. Deceptive in its pale color, the 2014 is beautifully persistent, not to mention impeccable in its balance, with terrific underlying structure. The 2014 is wonderfully alive in the glass. I loved it. Disgorged February 2018. Dosage is 3 grams per liter.

Very rich and concentrated the palate is flooded with opulent ripe blackberry, liquorice and dark plum flavours that have an adolescent youthfulness. Excellent power with a long conclusion of liquorice, ripe blackberries, dark chocolate and spicy vanillin oak. A big rich sparkling Shiraz that will evolve beautifully in the cellar.

    The colour here is something else; it makes deep purple look insipid. Blackberry and violet, dark boiled XMAS cake, chocolate and leather, with a slightly briny character too. It’s dense and tannic, full of juicy purple flavour, along with raspberries, salt beef and spice. It’s almost more savoury than simply sweet, and has layers of complexity and a full throttle finish rolling with dark chocolate and a thick pillow of tannin. Pretty much, this is how you do it.     The 2012 Champagne Louis Salmon Blanc De Blancs is entirely from Côte de Blancs Grand Cru villages and saw 25% oak vinification, with most of the malo blocked to retain freshness. Initially, it opens to citrus-driven aromas of lime, but as it opens in the glass, it deepens to reveal notes of white peach, fresh bread, and a touch of toasted spice, with its portion of oak just highlighting the edges of the wine. The palate offers intensity without austerity, with a good, profound, layered feel, and it has a pillowy and elegant mousse, a coating texture of citrus oil, and a long finish. It’s already hard to resist but will improve with time. It’s a wonderful wine for Billecart-Salmon in this vintage. Bravo. Drink 2026-2046.     In 1818 Nicolas Francois Billecart and Elisabeth Salmon were married and founded Maison Billecart-Salmon in Mareuil-sur-Ay, the family’s hometown. The pair joined forces with Louis Salmon, Elisabeth's brother, who oversaw all the commercial activity for the house. Nicolas Francois, who was passionate about oenology, dedicated himself to the creation of the wines. As a tribute to this trio, Billecart-Salmon have crafted three cuvees beginning with the Cuvee Nicolas Francois (first created in 1964), followed by the Cuvee Elisabeth Salmon Rosé and Cuvee Louis Salmon Blanc de Blancs.

    Cuvee Nicolas Francois is a blend of the best terroirs from Montagne de Reims (Pinot Noir) and Cote des Blancs vineyards (Chardonnay), with vinification partly in traditional oak casks lending generosity to this elegant and fine Champagne.

    Billecart-Salmon’s 2012 Nicolas François marks the first release since 2008 and stands as another success. The fundamentals remain unchanged: settling and fermentation at low temperatures, a small proportion vinified in oak barrels and partial malolactic fermentation (20% was blocked in 2012). This vintage was characterized by a prolonged flowering period, significant rainfall and mildew pressure, resulting in a small crop. The harvest of fruit, which contributed to this cuvée, took place between September 17 and 22. "It was crucial to select only the ripest fruit, as maturation varied significantly between plots," explains Billecart’s head winemaker, Florent Nys. But what of the wine itself? Disgorged in May 2023 with a dosage of 3.8 grams per liter, it exudes aromas of candied lemon, honeysuckle and ripe peach, mingling with nuances of beeswax and orange zest. On the palate, it is full-bodied, ample and enveloping, boasting a layered, concentrated core, a chalky structure and mouthwatering acidity, despite the warm vintage. It concludes with a persistent, saline finish, hinting at the savory complexity that has emerged with such notable bottle age. Compared to the 2008, which remains tightly coiled, the 2012 is broader-shouldered and more demonstrative. Drink 2026-2047.

    Made from 60% Pinot Noir and the rest Chardonnay, the 2012 Champagne Nicolas François has a complex élevage and was tasted as a vin clair. Bottled at the end of June of this year (the magnum in July), it’s highly aromatic on opening at this stage, with aromas of honeydew melon, ripe peach, and fresh flowers. Medium-bodied, it is long on the palate, with a linear feel, but has a ripe, rounded exterior and a clean, chalky finish, with notes of grapefruit pith and fresh lift. At this early stage, it feels as though it may be approachable in its youth, but we‘ll have to see.

It pours a deeper salmon orange tinge and is a more assertive wine in the glass, with notes of spice, smoky wet stones, peach, almond, and fruitcake. Medium to full-bodied and assertive, it holds its mousse together more clearly and has more transparency, with a pomegranate texture, and is long on the palate. This structured wine will benefit from another year or two in bottle before drinking over the following 15 or more years.     The 2016 vintage is aged on lees for 5 years and is comprised of 66% Pinot Noir and 34% Chardonnay sourced from 100% Grand Cru vineyards. 25% of the wine is matured in oak barrels and is bottled at 1.9g/L dosage.
    A buoyant lacy mousse is underpinned by a pale straw to straw coloured base that has gold tinged edges and has a steady stream of nimble bubbles coursing through it. Classically finessed Billecart-Salmon aromatics of yeast lees, baked bread and brioche stream out of the glass followed by hints of cashew, citrus and oily toast like notes. Refined and sculptured by invigorating acidity, the mouth watering palate features yeast lees, citrus and baked bread flavours over delicate cashew and oily toast like characters. Finishes long and dry.

    Billecart-Salmon's 2016 vintage continues the house's drive to creatively lower dosage levels, coming in with just 1.9g/L in this year of extreme weather. The 2016 will be at its best from mid-2024 but is already showing a mature clementine and juicy apricot fruitiness, warmed up with ground nuts and fragrant raspberry. Neat and slightly reticent on release, there is a subtle insistency here, and it will lengthen and unfurl with more time on cork. The most impressive of Billecart's recent vintage releases. Made with 100% grand cru fruit, 25% of which was vinified in small and large oak. Drink 2024 – 2030.

Crushed rocks, mint, spice, dried herbs, hazelnut, lemon peel and marzipan are all beautifully laced together. The 2008 is just entering its first plateau of maturity, making it a fine choice for drinking now and over the next two decades, possibly more. The blend id 60% Pinot Noir (from Mareuil-sur-Aÿ, Ambonnay, Bouzy, Verzy and Verzenay) and 40% Chardonnay (from Mesnil, Chouilly and Cramant).     From the walled vineyard behind Billecart's HQ in Mareuil-sur-Aÿ planted exclusively with Pinot Noir. It was all vinified in oak. Apparently 'this micro cuvée will pair wonderfully with a wild turbot and Burmese coffee'. The label is made of cherry wood sourced from sustainable forests. Each individual wooden label is distinguished by differences in grain and colour, making each bottle unique.
    Full of life on the nose and richly textured on the palate. Thoroughly satisfying wine with quite a bit of body that reaches every crevice of the palate. Firm, savoury finish. A serious, dense champagne for the table. Drink 2023-2032.

    Categorically the finest Extra Brut ever conceived, this is a cuvee of laser line and immortal structure that rejoices in the lightning energy of 2008 and the exacting precision engineering that is Billecart. A glowing, medium straw hue is a dazzling prelude to its scintillating purity and drive, cut with magnificent acid line and high-tensile chalk structure. The distinguished, north-east facing slopes of Verzy and Verzenay take a delightfully fragrant and pure lead, presenting white cherry and strawberry hull that ring out in clear peals like church bells. Age has done nothing to evolve its pitch-perfect high notes, lending just the most subtle nuance of fresh almond. A cuvée to age for another 20 years at least – and it will live effortlessly for 50.     A blend of 65% Pinot Noir consisting of Premier and Grand Crus from the Montagne de Reims and the Vallee de la Marne and 35% Chardonnay from the Cote des Blancs. Significantly, this has nine years ageing on its lees (longer than some Prestige Cuvees), the 2008 was first released onto the global market back in March 2019. With an Extra Brut dosage of 4g/l, this is a highly expressive, confident and convincing interpretation of the vintage. Right now, it is youthfully sharp and focused with fine salinity, depth, acidity and balance, and as such is already extremely approachable. The flavour spectrum encompasses toast, oyster shell, citrus, cream and a flinty, mineral depth. There’s supreme balance and elegance here, combined with a hidden underlying power that will continue to emerge and broaden with time. The finish is dry and long.

It’s a terrific 2008, especially for readers looking for a relatively affordable option to some of the super high-flyers in this celebrated vintage.     100% Chardonnay from the grand cru villages of the Côte des Blancs: 40% Chouilly, 33% Cramant, 20% Mesnil-sur-Oger, 7% Avize with 33% of the base wines vinified at low temperature in oak casks that are 15 years old on average. It was disgorged in May 2021 with a dosage of 7 g/l after 11 years' ageing on lees. (Information given on the back label.)
    Surprisingly meaty and broad for a Blanc de Blancs – a very serious, mature wine with real savour – a white burgundy sort of Blanc de Blancs. Tastes pretty dry – a food wine? Certainly a champagne connoisseur's wine… Really opens out on the finish.

    Disgorged in November 2020 with two grams per liter dosage, Billecart-Salmon's newly released 2006 Brut Le Clos Saint-Hilaire is showing well, unwinding in the glass with aromas of pear, mirabelle plum, dried fruits, walnuts, bee pollen and spices. Full-bodied, layered and vinous, it's a concentrated, muscular young wine, allying maturing flavors with broad structural shoulders and racy acids and concluding with a long, resonant and slightly mordant finish. From a parcel planted in 1964 and vinified entirely in oak, this is a powerful Champagne of considerable presence that needs some more time on cork to unwind and round out. Drink 2023 - 2036.

    Although it was disgorged in November 2020, Mathieu Roland Billecart has been keen to delay the release. The ageing post disgorgement is just as important as that before it and sometimes overlooked, he maintains. The wine has an attractive Welsh gold colour, a lively and persistent mousse, and seductive aromas of nectarine, greengage and Victoria plum. I even noted a hint of spearmint. The palate maintains a youthful nervosité; behind that generous fruit, including red fruit (cherry mainly), hints of brioche and hazelnut and then an authoritative finish. Great potential.     Rich nose, yeasty and so alive. The oak shows even more as the wine opens up, giving a cedar spice. Such underlying depth and richness with such a surprising mineral and acidic backbone with a verbena note, mandarin – the most citric of the lot. There is a subtler nuttiness here that is almost creamy, like a Belgian chocolate, almost oily on the finish yet with such direction. Drink 2025 – 2045.

    An exuberant mousse holds well over a pale straw, pale gold tinged base that’s threaded by an ultra fine and very persistent bead. Heady baked bread and yeast lees aromas fill the nostrils with hints of citrus and pear fruits also present. Subtle oily toast and roasted almond like notes ensue. Racy yeasty baked bread and citrus flavours are both sculptured and tense. Oily toast like characters, chalky oyster shell and roasted almond characters fill out on the back half. Finishes very dry and crisp with a chiselled feel to the long aftertaste.

    Billecart-Salmon’s ever reliable Reserve Brut is made from a blend of 30% Pinot Noir, 30% Chardonnay and 40% Pinot Meunier and spends 30 months ageing on its lees. 50-60% of the blend is made up of reserve wines.
    Buoyant and frothy upon pouring, the mousse fades into a pale straw coloured base that has flecks of pale gold to the edges and an extremely fine and persistent bead flowing through its core. A classic sniff of yeasty baked bread characters is followed by pear, cashew, hints of dried honey and brioche. The delicious palate has a satiny and airy like feel to it and features a flavour profile of baked bread, pear, yeast lees, subtle cashew, citrus and brioche. Dry crisp chalked tinged finish with a long and delicately creamy aftertaste.

    Billecart-Salmon have created a commemorative cuvée to celebrate the 200th anniversary of one of Champagne’s finest houses. From eight grands crus in the Côte des Blancs and Montagne de Reims, Billecart-Salmon’s new cuvée is a blend of the most exceptional wines from the 2000, 2003, 2008 and 2012 vintages comprising 92% Pinot Noir and 4% each of Chardonnay and Pinot Meunier. Of course with only 1,818 magnums made, few will get to experience this masterpiece.

    This new wine was made to ‘capture the essence of Billecart-Salmon', according to seventh generation owner Mathieu Roland-Billecart. From 92% Pinot Noir, 4% Chardonnay and 4% Pinot Meunier, this is a blend of eight grands crus from the Côte des Blancs and Montagne de Reims, including the 1ha Pinot Noir vineyard of Le Clos St-Hilaire in Mareuil-sur-Aÿ. Exceptional reserve wines from 2000, 2003, 2008 and 2012 were vinified half in steel and half in old oak casks, with a dosage of 4.5g/l, making it an extra brut style. It has a hugely expressive nose of red apple, nougat and citrus, with the hallmark ‘old rose’ fragrance from Clos St-Hilaire. There's an elegant mousse with very fine, fast-streaming bubbles and powerful, juicy flavours of baking spices, praline, and tart apples. A smoky mineral note and bright acidity offer real refreshment through the long finish, and while drinking beautifully now, it has the structure to last and will improve with age. To mark the year of the house’s founding, just 1,818 magnums were made, along with 18 jeroboams. Drinking Window 2018 - 2035.

    Created in 1988 as a tribute to the co-founder Elisabeth Salmon, this cuvee is an elegant and refined rosé composed of 55% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, along with 45% Chardonnay from the Côte des Blancs. Less than 10% of the Pinot Noir is vinified as a red wine, with these old vine grapes sourced from the south facing slopes of the Valofroy vineyard located in Mareuil-sur-Aÿ. This 2008 rendition shows all the traits from this magnificent year, a highly refined wine with wonderful delicacy of texture and flavour. Dosage is 7g/l.

    Disgorged with seven grams per liter dosage, the 2008 Brut Rosé Cuvée Elisabeth Salmon is one of the finest wines I've tasted from Billecart in recent years. Unwinding in the glass with aromas of peach, mandarin oil, warm bread, red berries and petals, it's full-bodied, deep and vinous, with lovely mid-palate amplitude, terrific concentration and bright girdling acids. In what is quite a tightly wound vintage and from a house whose style is rather understated, this is a dramatic, fleshy wine that concludes with a long, flavorful finish. Drink 2022 - 2048.

    This is very vinous with aromas of iron, strawberries, old roses and geraniums. So aromatic. Full-bodied, really intense and layered with super dryness and depth. Lots of saline and spicy character at the end, such as clove and pepper, as well as hints of flowers and melted butter. Strawberry tart at the end. 17% in aged oak casks. Blend of 55% pinot noir from six villages (Mareuil sur Ay, Ay, Bouzy, Ambonnay, Verzenay and Verzy) and 45% chardonnay from three Grand Crus (Mesnil sur Oger, Cramant and Chouilly). 9% of the blend is red wine from a parcel in the village of Mareuil sur Ay. Bottled June 2009 and disgorged July 2019. Drink or hold.

    The 2008 Brut Rosé Cuvée Elisabeth Salmon explodes from the glass with a mesmerizing array of aromas, flavors and textures. Blood orange, cinnamon, mint and dried flowers. The 2008 is incredibly young, but it is also incredibly tempting. Patience will be rewarded. In the meantime, readers might enjoy adding a few bottles of the stellar 2007 to their cellars, as the nervy, taut 2008 needs time. The 2008 is 55% Pinot Noir (from Aÿ, Verzy, Verzenay and Mareuil) and 45% Chardonnay (from Chouilly, Avize and Cramant), with 9% still wine from Mareuil. It is the first vintage that includes a portion of wines (17%) done in barrel and the first vintage in which the magnums were aged on the cork rather than on crown seal. Dosage is 7 grams per liter. Drink 2028 - 2043.

    A superb vintage of this renowned prestige cuvée, this is made from a base of 55% Pinot Noir and 45% Chardonnay, to which is added 9% of red wine. Despite ageing on its lees for 10 years, it remains almost shockingly youthful, its vividly primary flavours of red cherry, strawberry and nectarine wrapped up in a taut, tense frame. It’s silky in texture and intricately complex on the long, elegantly harmonious finish, underlined by a saline chalkiness, and it demonstrates all the requisite completeness and character for long ageing, promising a slow and dignified evolution to come.     Categorically the finest Extra Brut ever conceived, this is a cuvee of laser line and immortal structure that rejoices in the lightning energy of 2008 and the exacting precision engineering that is Billecart. A glowing, medium straw hue is a dazzling prelude to its scintillating purity and drive, cut with magnificent acid line and high-tensile chalk structure. The distinguished, north-east facing slopes of Verzy and Verzenay take a delightfully fragrant and pure lead, presenting white cherry and strawberry hull that ring out in clear peals like church bells. Age has done nothing to evolve its pitch-perfect high notes, lending just the most subtle nuance of fresh almond. A cuvée to age for another 20 years at least – and it will live effortlessly for 50. In sheer, breathtaking purity, monumental chalk minerality, endless longevity – not to mention ludicrous affordability – Extra Brut 2008 is one of the champagne buys of the decade.

    A blend of 65% Pinot Noir consisting of Premier and Grand Crus from the Montagne de Reims and the Vallee de la Marne and 35% Chardonnay from the Cote des Blancs. Significantly, this has nine years ageing on its lees (longer than some Prestige Cuvees), the 2008 was first released onto the global market back in March 2019. With an Extra Brut dosage of 4g/l, this is a highly expressive, confident and convincing interpretation of the vintage. Right now, it is youthfully sharp and focused with fine salinity, depth, acidity and balance, and as such is already extremely approachable. The flavour spectrum encompasses toast, oyster shell, citrus, cream and a flinty, mineral depth. There’s supreme balance and elegance here, combined with a hidden underlying power that will continue to emerge and broaden with time. The finish is dry and long.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
