2021 Bellebonne Vintage Cuvee

An elegant, racy Tassie Sparkling that has a sculptured feel.

A blend of 60% Chardonnay and 40% Pinot Noir aged for 3 years on lees. Pours with a fine plentiful mousse that slowly subsides into a pale straw coloured base that has a nibble stream of tiny bubbles coursing through it. Elevated citrus, baked bread and yeast lees aromas fill the nostrils with hints of dried honey and cashew also evident. Elegant baked bread and yeast lees flavours are underpinned by crisp lemony acidity which imparts a tense chalk tinged feel. Delicate green apple and mineral elements sit in the background. Finishes dry and racy with a sculptured feel.
Drink over the next 5-6 years.
