Allen Meadows - BurghoundDerived from old vines in Les Minots (that are a source for the Fèvre massale selection), as well as holdings in Roncières and Chatains, the 2020 Chablis 1er Cru Vaillons unwinds in the glass with notes of white flowers, crisp stone fruit and clear honey. Medium to full-bodied, satiny and enveloping, it's a beautifully vibrant, racy wine that concludes with a long, penetrating finish. It's the best young Vaillons I've ever tasted chez Fèvre. This is very much a work in progress, and I would advise allowing this at least 5 years of cellaring and it should easily reward a decade or more. Drink from 2030+.

The result is certainly a very compelling wine, exhibiting aromas of crisp green orchard fruit, white flowers, freshly baked bread, oyster jus and white peach, followed by a full-bodied, taut and layered palate that's seamless and complete, concluding with a pungently mineral finish. This is classic Les Clos in that it manages to be at once big and overtly powerful while remaining refined and classy. This is, in a word, stunning. Drink from 2032+.

The 2019 yields just 25 h/ha and had recently been racked, so had not fallen clear. The bouquet is immense. Keep sniffing, and it keeps offering more. This year Les Clos has a dimension over and above all the others. Not just density, but amazing depth. A little touch of bitters too, which we like at this stage. Such great length!

Grand cru weight and impressive length bringing out the saline character at the end.

Finishes dry with well balanced acidity and an aftertaste of pear, subtle dried honey, wet stone, citrus and biscuity cashew. A fuller style of Chablis with plenty of drinking appeal.

Very subtle, elegant yet extract-rich wine with terrific dusty length and lift. Ultimately dry and classic, this wine reverberates on the palate for a minute or more. Vincent Dauvissat's Preuses is frequently the finest and most complete example of this grand cru but the William Fèvre version is often my #2 choice.

Of the six grand crus from Fevre, this might be my favorite. The palate is well balanced and very harmonious. The acidity is well judged and it possesses great elegance and femininity. One of the best wines from the domain this year, it comes recommended.

Round, plush and seamless on the palate, with its juicy citrus fruit and ginger flavors lifted by minerality. This silky, sedate, rich wine has no corners and seems almost too easy and expressive today for grand cru. But it also has the stuffing and balance to age, and a finishing element of brown spices provides lift.

(all of William Fèvre's vines in Fourchaume are situated in Vaulorent, where they're the largest land owner; there's usually a separate estate bottling labeled as Fourchaume but not in 2016): Pale green-tinged yellow. Musky, complex aromas of citrus fruits, spices, minerals and pepper. Ripe fruit notes are joined by a hint of exotic lichee, but the wine's pliant texture is nicely supported by pepper, spices and minerals. This fairly large-scaled, savory wine boasts an exhilarating balance of sweetness and acidity. Finishes with explosive length and a strong impression of terroir. The crop level here was just 18 hectoliters per hectare and my notes say that this wine is at the same high level of quality as the Montée de Tonnerre.

As such, the aromatics are too leesy to assess. The palate is balanced with a saline, sour lemon-tinged entry, perhaps lighter than the Bougros Côte Bouguerots and with a prickle of spice toward the finish. It should gain complexity and harmony throughout its élevage and will be one to watch.

Clamps down impressively on the superb, sappy, slowly rising finish, leaving behind piquant notes of grapefruit, lemon zest and minerals. Classically dry, crystalline and taut but not austere. This beauty really spreads out to saturate the palate on the back end.

The vineyard's northwesterly exposure makes for a slightly unusual terroir in this part of Chablis however, there is still plentiful sunlight throughout the growing season, and the high-quality soils warm up quickly with the sun's rays, which aides in creating a mesoclimate that ensures optimum ripening to produce one of the most elegant styles of Chablis Premier Cru.

Unwinding in the glass with a lively bouquet of fresh peach, green apples, spring blossom, oyster shell and wheat toast, it's medium to full-bodied, deep and multidimensional, with exceptional concentration, racy acids and a long, penetrating finish. Didier Séguier should be very proud of this weightless but intense Vaulorent, a wine that outshines plenty of grand cru Chablis this year.

The palate is lively and fresh in the mouth and shows a little more depth and concentration than the Mont de Milieu. It flows and fans out nicely towards the finish and should offer several years of drinking pleasure.

The 2021 Pinot Gris Clos Jebsal is a monopole for Zind-Humbrecht. It is located between Brand and Heimbourg, utterly different from both, with calcareous marl and gypsum on south-facing terraces. In the past, this was dedicated to making sweeter wines with botrytis. The vines were planted in 1983. The nose has a flicker of reduction, followed by an aromatic notion of pear, freshly turned earth and orange peel. The palate has concentration and flow, a russet pear texture and a salty, cool, mouth-watering core. The saltiness is more intense than the fruit. The beautiful, bone-dry finish is very appetizing. The 2021 Pinot Gris Clos Windsbuhl has a flicker of reduction and shows off subtle russet pear, ripe and gentle. The palate has a pear peel texture and seems almost austere with its bone-dryness. A lemon touch makes the mouth water and becomes more intense towards the dry finish, which holds some gingerbread spice, ginger and cinnamon. Gorgeous and different. (Bone-dry). Drink 2027-2060.

The golden color of the 2021 Pinot Gris Rangen de Thann Clos Saint Urbain Grand Cru signals richness. However, the wine is subtle on the nose and still clouded by promising reduction. The palate presents juicy pear, lemon-edged, with a lovely licorice bitterness. The acidity is smooth and balanced, but licorice keeps flashing up darkly, broodingly, speaking of the dark volcanic stone. The finish is very long and intriguing because this is such a taut, almost austere Pinot Gris, compelling and dramatic. Wait for this. (Bone-dry). Drink 2027-2070.

The 2021 Riesling Clos Windsbuhl is grown on Triassic limestone, facing east to southeast, on the upper part of the clos with less topsoil. The age of the old vines is unknown, estimated to be 65 years old. The younger vines were planted in the early 1980s. Windsbuhl means windy hill and used to be referred to as petit Sibérie - so it comes into its own now. Reduction takes over on the nose, but underneath, there are gentle glimpses of lemon. The palate has a real phenolic edge, a lovely, pithy bitterness that lends contour to the lemony flow. Lovely flashes of passion fruit pop up, upping the aromatic game, lending allure to flavor and texture, underlined by a bone-dry finish. (Bone-dry). Drink 2027-2060.

The 2021 Riesling Rangen de Thann Clos Saint Urbain Grand Cru is from the famously steep and dark volcanic rock of Rangen with some sandstone inclusions. The soil is rich in potassium which buffers the pH of the wine, making the acid less strident yet lending much power to the wines. The oldest plots of Riesling are up to 60 years old; the younger vines are 45 years old. The color is golden. Underneath the reduction is a spicy smokiness, with greengage and white pepper. There is something utterly fluid, intense, compact and concentrated that seems to have a total verticality, driving into the depth of the rock. The wine has luminous citric yet balanced freshness and is clear as a bell. Wait for this because it will be sensational. The finish is bone-dry and salty. (Bone-dry). Drink 2027-2080.

Brilliant pale straw to straw colour with a watery hue. Lifted ripe pear, rosewater and Turkish delight aromas are trailed by some ginger spice notes. Rich, amply weighted pear, honeysuckle and Turkish delight flavours overlay lychee and ginger characters. Texturally lush and concentrated. Slightly off dry finish with lively acidity and a long spicy aftertaste.

Pronounced aromas of salinity, petrol and toasted oak rise up out of the glass. This wine offers a rich, dense texture accented by fresh apple notes and a slightly petrol finish. This is a wine of intensity and body, although it does carry a bit of alcohol heat on the finish. Pair it with mild pasta dishes, fish or cheese, though, and you won't even notice.
