Pedro XimenezPedro Ximenez Sherry or "PX" as it's often called, now rivals Rutherglen Muscat in popularity. By dehydrating the harvested grapes under the sun, the sugars are concentrated. The resulting dessert wines are dark mahogany-coloured, intensely sweet with liqueur-like flavours of dates, raisins and toffee. While entry level PX's from Spain generally deliver the goods, extra-aged PX Sherries (thirty years or even more) remain among the last great bargains of the wine world and must be tasted to be believed. Try younger PX sherries over ice to balance the sweetness, or enjoy with anything chocolate!
