The Lark Distillery Rum Cask Release Cask Strength Single Malt Australian Whisky (500ml) - 2019 bottling

Larks have dabbled in Rum cask matured whiskies before. The results can work extremely well, especially complimenting a malt as rich as theirs. The distillery launched their own rum in 2008 which in later iterations was marketed as "Quiet Cannon Rum". It left the distillery with a treasure trove of rich, sweet and decadent empty rum casks. They selected the finest of these to finish an extremely limited quantity of Lark whisky. The 2019 release yielded 309 bottles, slightly more than the 2020. Long sold out at the distillery, we're fortunate to have secured small parcel. 55% Alc./Vol.

Notes from Larks... Nose: Fresh cream with butterscotch sauce, nougat wrapped around sweet pineapple with cinnamon. Palate: Apricot danish alongside cantaloupe with vanilla custard over pancakes. Savoury notes notes start to take hold with marmalade on rye bread. Finish: Chocolate mandarin followed by rum and raisin ice-cream served in a waffle cone. Treacle and wood resin rounds out the lengthy finish.
