The French Oak Second Fill range offers a different take on the distillery’s original French oak style, drawing from casks that have previously held their whiskies. This second-fill approach reduces the oak influence, allowing the spirit’s bright fruit and floral notes to shine. Like Sullivan Cove's Double Cask, the aromatics are a strong point - softer and more refined too, ranging from dusty cocoa and choc ripple cookies then leaning towards dried orchard fruits, nutty malt and baking spices. Those characteristics are echoed on the palate alongside ripe peach flavours and suggestions of nectarine or feijoa. The profile catches your attention, the balance is honed and the finish is in tune. Filled into a cask in Nov 2012 and bottled in Nov 2023. 480 bottles produced. 47.1% Alc./Vol. 15ml sample.
