Unlike the core range French Oak Single Cask, which is aged in ex-tawny casks (Australian port-style fortified wine), this single cask whisky is aged in French oak casks previously used to mature an Australian white wine. According to the head distiller, "What a ride... Deeply beguiling, it appeals to the intellect, palate, and the soul." 

A well-aged Sullivan's Cove, filled into a cask in May 2006 and bottled in Oct 2021. 290 bottles produced.
