Eight barrels from five distilleries including sherry, port, tokay, bourbon and peat with whiskies varying from 2 to 9 years of age make up this diverse creation. Despite the unusually high number of barrels, the outturn was just 160 bottles. Heartwood proprietor, Tim Duckett comments; “900ml of young peated whisky (2 and 3 years of age) were added to the concoction. It gave great length but also introduced a youthful upfront grassiness (a flaw in the whisky). To eliminate this flaw, we moved the brew into the sweat box at temperatures between 20 and 30 degrees.
