2010 Signatory Vintage Caol Ila 10 Year Old Single Malt Scotch Whisky (700ml)

Juggling traditional methods and modern technology, Caol Ila continues to produce an incredibly consistent, citrusy / maritime island style which is emphatically Islay (indeed, it was once called 'Mr Consistent' by a noted whisky critic). Even though the malt specification is the same as its more famous sister distillery, Lagavulin, Caol Ila’s distillation process which includes a longer fermentation, higher cut point and taller stills reduce the weight of the phenols making for a more accessible 'medium peat' style. Refill casks are the norm, as is the case for this 43% expression from Signatory.
