Tasting note: [Cask 1970-005] The most limited expression in the shipment is also one of the oldest bottlings to date from the Speyside Distillery (est 1991). Drawn from a sherry butt, as demonstrated by the deep colour - it's a touch acidic before settling into full-on malty form with oloroso slowly kicking in. On the nose, there's lovely purity and definition with dried fruits, especially prunes and figs as well as cocoa and new leather. At near 60%, it's remarkably sleek and accessible... Sponge cake, then a touch of curacao. Excellent length, finishing with walnut fudge, orange zest and a flurry of warming spices. Rebounds late. A bit of 'breed' to this (meaning you could mistake it for a more prestigious marque). Takes time to develop, so give it plenty of air. 57% Alc./Vol. Non chill filtered 303 bottles.

Notes from Claxtons... Intense dried leaves and tomatoes, dry sherry notes and fruits including apricots and figs on the nose leading to citrus, dark chocolate and muscovado sugar on the palate and toffee apples and walnut cake to finish. A wonderful example of a well-aged sherry matured spirit with lots of nurturing depth.
