1989 Glenallachie Single Cask #6121 Pedro Ximenez Cask 30 Year Old Cask Strength Single Malt Scotch Whisky (700ml)

Pedro Ximenez produces a luscious dessert style sherry, with aromas and flavours of figs, dates, toffee and caramel. The slightly smaller hogshead used in this maturation has provided greater wood and spirit interaction, enhancing the intensity of flavours. It's another barrel hand picked by Billy Walker for the latest round of single casks and it's one of the deepest, darkest we've ever seen. 309 bottles filled at 47.7% Alc./Vol.

Notes from Glenallachie... Nose: Mocha, heather honey, ginger, pineapple and eucalyptus. Palate: Fantastic presence of dark chocolate, mocha and dried fruit, with heather honey, orange zest and pineapple. Non chill filtered.
