An extraordinary buy if you're into extra old Islays is this all natural Caol Ila from indie bottler, Signatory. Aged in hogshead No 5292 for 32 years yielding 249 bottles on the 19th of January 2016, the asking price here is significantly lower than the official distillery 30 year old (normally $800). Older Caol Ilas can be quite stunning; the peat recedes and the quality of the spirit shines through.
