2021 Yalumba The Signature Cabernet Sauvignon Shiraz
    Barossa, South Australia, AUSTRALIA
    $59. 99
    Bottle
    $719.88 Dozen
    Cellar: Drink now - 15 Years (2024-2039)
    ABV: 14.5%
    Closure: Cork

A classic blend of Cabernet Sauvignon and Shiraz first produced in 1962, Yalumba’s Signature pays homage each vintage to an individual who has made a significant contribution to the culture and traditions of Yalumba. The 2021 vintage’s signatory is packaging & development manager Chris Gerhardy who has been with Yalumba for over 50 years. This year’s release also marks the 50th vintage of Yalumba The Signature.
From vines with an average age of 49 years the 2021 Signature is a blend of 53% Cabernet Sauvignon and 47% Shiraz with maturation taking place in a combination of French barriques and Hungarian hogsheads (23% of which was new oak) for a period of 19 months.

A magnificent marriage of Cabernet Sauvignon and Shiraz.

Dense inky black heart with a very deep dark red black tinged hue. Pronounced blackcurrant, dark chocolate and liquorice aromas are interwoven with blackberry, tobacco, dusty vanillin cedar, dried herbs and spice. A perfect amalgamation of richness and refinement, the palate features a powerful wave of blackcurrant, blackberry and liquorice fruit which marries into a spicy vanillin cedar, tobacco, earth, dried herb, subtle dark chocolate and faint black olive back drop. Wonderfully deep and intense, the glorious layers of fruit are supported by a fine grained tannin structure that has a polished yet sturdy feel. Concludes very long and generous yet harmonious.
Drink over the next 10-15 years.
    Alc. 14.5%

    Other Reviews…..
This wine could easily be in the running for one of the best 2021 wines from the region. Deep in colour with stunning purity across the spectrum of blackberry, black cherry and dark plum fruits. Fragrant with citrus and almond blossom notes, aniseed, cedar, new leather, tobacco, panforte, bay leaf, wood spice and Christmas cake. Sporting a stunning fruit density and tension, it glides, thick with fine, billowing tannin, with a pitch-perfect cadence across the palate, lacy acidity playing its part in focusing the wine's intrinsic elements with aplomb. Pure, vital and beautifully composed. It's sure to be a classic. Drink by 2054.

There was no 2020 Signature made. The year was very hot, and the Cabernet Sauvignon wasn't in the condition that the winemaking team wanted for the Signature; that decision was made early-on in the season. The 2021 The Signature Cabernet Sauvignon Shiraz is vibrant and fresh on the nose, and it leads with cassis, raspberry and pink peppercorns. It's alive and electric with flavor. 2021 was a lovely season in the Barossa: cool, mild and long, with very little climatic pressure to pick prior to when producers deemed the fruit ready. There are hints of strawberry, scraped vanilla pod, coffee grounds and star anise. I really like the aperture of this wine, with its definition, focus and freshness. 14.5% alcohol, total acidity 6.06, pH 3.63, sealed under natural cork. Drink 2024-2041.

An explosive, super juicy Grenache that makes for highly addictive drinking.

Deep dark purple red core with black shaded edges and a bright purple hue. The wonderfully fragrant nose is singing with red to dark raspberry, violet, red liquorice and blueberry scents. Subtle fresh herb and peppered earth notes are also evident. Super juicy and intensely flavoured, rich red to dark raspberry, red liquorice and cherry fruits explode across the exuberant palate with delicate infusions of dried herbs, scorched earth and pepper the undercard. Magnificent power and silky tannins with fresh acidity lending an energetic feel to the long super succulent finish. Highly addictive drinking over the next 5-6 years.

This is the younger vine bottling, coming mainly off vines planted in '08. Up to three weeks on skins; maturation in steel and old puncheons and foudre. This is a nice foil to the Old Vine bottling, showing what relatively youthful vines can do on this great site. There’s an open red-berried and cherry fruitfulness, with red florals supported by savoury spice and a foundation of purposeful natural tannin. This doesn’t have the mineral depth of the Old Vine, but the fruit vibrancy and exuberance yield their own rewards. Drink by 2030.

    2023 Yering Station Chardonnay
    Yarra Valley, Victoria, AUSTRALIA
    $36. 99
    Bottle
    $443.88 Dozen
    Cellar: Drink now - 5 Years (2024-2029)
    ABV: 13.2%
    Closure: Stelvin

The site of Victoria’s first vineyard, the Rathbone Family have built Yering Station into one of Yarra Valley’s leading estates. This brilliantly composed Chardonnay sees maturation in a mix of new (22%) to 6 year old French oak puncheons for a period of 8 months.

A beautifully refined and sophisticated Yarra Valley Chardonnay.

Brilliant pale straw colour with subtle green highlights around the outskirts and a watery hue. Ascending through the olfactory senses are delightful aromas of white peach, nectarine and dried honey which are complimented by hints of biscuity oak, citrusy nougat and spice. Mid weighted and nicely fleshed, the palate features white peach and nectarine fruits over a dried honey, biscuity nougat, cashew and spice back drop. Showing ample freshness and a gently creamed feel it finishes long and refined.
Drink over the next 4-5 years.
    Alc. 13.2%

Barrel fermented and matured in puncheons (22% new). No mlf. Bright green gold. A touch richer and more complex than the very good Village Chardonnay. An attractive nose of stone fruits, orange blossoms and grilled nuts leads onto the palate, which has good depth and persistence. There's a little orange pith on the long, refreshing finish. Drink by 2029.

Matured in 500L puncheons for 8 months of which 22% was new oak. Golden peach and nectarine flesh, sunflower and kernel. Lemon aspen and pineapple nectar. Summer frangipani blooms. Like a giving tree this wine bestows without being buxom and relying on oak for its breadth. It’s pure fruit heaven. Picked with free flowing acidity and supported by vanilla cake and grated nutmeg oak nuances. It’s still light on its feet but will satisfy the chardonnay drinker who chooses wine based on taste and substance. Serve alongside a homemade salmon quiche.

Sourced from eight estate-owned vineyards within the Wairau Valley with vines on average 26 years old. The fruit is whole bunch pressed to tank for fermentation and matured on lees for 4 months before bottling.
Brilliant water like colour with a greenish tone to the edges. Leaping out of the glass are pungent scents of passionfruit, grapefruit and herbaceous gooseberries followed by some green apple, grassy asparagus and flinty mineral notes. Zesty passionfruit, lime and gooseberry fruits race across the intensely flavoured palate with some herbaceous grassy characters, green apple, subtle asparagus and mineral elements lying underneath. Finishes dry and crisp with a long zippy aftertaste.

If you’d like to taste Sauvignon Blanc in its modern day glory, look no further. The Marlborough sunshine and pinpoint precision in the vineyard and winery is all found here. Sourced from estate fruit in the Wairau Valley you’ll find star fruit, passion blossom, juicy pineapple and guava. The abundance of fruit continues on the palate with an electric line of acidity and sea spray finish. The dryness of the wine takes elegance to another dimension. Sith purity and drive, this is a triumph of a vintage and its magic is captured in the bottle. Drink now with raw scallop ceviche.

A model of consistency year in year out and one of Cotes du Rhones best buys, the 2020 vintage is a blend of 50% Syrah, 40% Grenache and 10% Mourvedre sourced from vines with an average age of 35 years. Maturation takes place in oak casks for a period of 18 months.
Deep dark red black core with a dark red hue. Lifted black raspberry and liquorice aromas intermingle with dark to black cherry, scorched earth and peppered meat notes. Rich and concentrated with an opulent yet chewy feel, the bold palate is awash with black raspberry, liquorice and black cherry fruits. Infusions of herbs du Provence, scorched earth and peppered meat characters lie underneath. Sinewy tannins firm up the lengthy ripe black fruited finish.

Significantly impacted by its elevated Syrah content, Guigal's 2020 Cotes du Rhone boasts expressive aromas of blackberries and blueberries, backed by ample black cherries. It's full-bodied yet supple and fluid, easy to drink and enjoy, with enough black olive and earth notes to ground it and keep it from being a simple fruit bomb. Drink 2024-2030.

    "Awesome, as always..." - whiskyfun.com

Just when you thought the most compelling deals in Single Malt Scotch Whisky would give way to end of year trade, this insane offer lands. Consistently one of our all time favourite expressions from Lagavulin, the American oak edition routinely makes it into Diageo’s acclaimed Special Releases program. Absent of the sherry input found in the standard sixteen year old, this is all about visceral intensity, minerality, brine and a kind of medicinal peat that has the ability to transport the senses. Cask strength, non chill filtered and from one of Islay’s greatest marques, the deal could not get any sweeter. Don’t hesitate to add at least two bottles to your shelf. 57.3% Alc./Vol. Non chill filtered.

Other reviews... Smoked ham on the bone, brine, highly aromatic smoke, and toasted oak, with the spices in a supportive role. Despite being more punchy and smoky than the 2021 release, there’s superb balance on the nose here. The palate opens with sweet vanilla, cotton candy, baked ham slathered in molasses, powerful spices, lemon peel, and red chile flakes, with peppery smoke on a lengthy finish. 91 points - whiskyadvocate.com

...From refill American and virgin oak casks. They love their legends, last year it was a lion on fire, this time it is a phoenix. I just adored last's years 12 yo SR (WF 92). Colour: white wine. Nose: goodness gracious, this is a blend of seawater, sorb and holly eaux-de-vie, gentian and chlorine (pool water). Some white asparagus too, shoe polish, sauna oils, new rubber bands and tyres, kerosene… And perhaps a little more fatness than in earlier releases. With water: some fresh paint this time, and even more new tyres and inner tubes, leatherette, benzine, kerosene (airport runway after a busy day) ... Mouth (neat): two-stroke Lagavulin, with citrus liqueurs and with straight peat smoke. Some kind of smoky limoncello, perhaps a little binary, but water should help. With water: this is funny, we've found the 8 in this 12, now that water's been added, but the 8 was a tad more in high-res, so to speak. Finish: long, with a little fatness from the woods (I suppose) and even something very marginally syrupy. Classic aftertaste, on iodine, tar, lemon and pure peat. Comments: some extra-sweetness in this variant. Awesome, as always, but the 8 has been a little nasty. Bugger! 89 points - whiskyfun.com

The San Giorgio estate vineyards are part of the Collemassari Group of estates with vines managed and vinified by the same world-class winemaking team of Tuscan icons, Poggio di Sotto and Grattamacco. Produced from younger vines (10-15 years old) ageing takes place in Slavonian oak casks and concrete vats for a period of 12 months.
Dark red core with black shaded edges and a red to dark red hue. Aromas of red cherry and red currant are trailed by some dusty earth, tobacco and spicy dried herb notes. Decorating the elegant mid weighted palate are delicious red currant and red cherry fruits with notions of earth, tobacco and dried herbs lying underneath. Spicy finish with slightly dryish tannins, excellent freshness and a long savoury red fruited aftertaste.

The 2020 Rosso Di Montalcino Ciampoleto pours a medium ruby hue, with pure, ripe fruit aromas of pressed red flowers, ripe raspberry, and sweet herbs. It is medium-bodied, with fine tannins, approachable ripe fruit, fresh acidity, and notes of orange zest, saline, and cranberry with delicate spice. This is a lovely clean style for the entry to the range. Drink 2023-2030.

"Big whisky, intensely sherry-forward...And not too dry of an Oloroso influence either... Everything kind of just works". - wordsofwhisky.com

There are true gems to be found in Signatory's 'Exceptional Cask' range, at prices that wouldn’t have been out of place a decade ago. This looks to be one. 'GL' reportedly refers to Glenlivet (but it could be Glenfarclas or Glenrothes...) The whisky was drawn from first-fill oloroso hogsheads and fairly active casks at that, delivering spectacular colour and a big, dried fruit, sherry hit that verges towards venerable Armagnac. Perhaps too much for some, but we know there are those who appreciate - even treasure - these extreme styles. 57.1% Alc./Vol. Non-chill filtered.

Other reviews... Nose: Big whisky, intensely sherry-forward. Hints of toasted bread accompanied with prunes, milk chocolate and dates, as well as sultanas. Also tinges of leather, some furniture polish and even molasses. Not the most complex, but much more balanced than the two malts above. Taste: Lovely stuff. There’s a pinch of pepper alongside figs, dates and rich dark chocolate. Then a tinge of tobacco leaves and cured meats, but also leather again. Finally some black tea and cloves, as well as a sliver of fennel. Finish: Long. More of the above. Syrupy fruits. Very good. I couldn't tell you the distillery, but does it really matter when the cask influence is this overwhelming? Not too much oak, so that's good. And not too dry of an Oloroso influence either, which is good too. Everything kind of just works. - wordsofwhisky.com/

...Cascade of red fruits, strawberry coulis, raspberry puree, tomato soup, apple crumble. After a while, the influence of the wood is felt, it becomes velvety, dark chocolate, ground coffee beans, mocha, soggy leather, smooth caramel, creamy honey, royal jelly. It becomes more and more mellow, nut cakes, olive oil, nougatine. Charcoal. The palate is quite round, soft caramel, coffee liqueur, but very quickly, the spices invade everything, cumin, black pepper, cloves. Finish Powerful and quite long, Viennese coffee with lots of whipped cream, chocolate fondant, some grainy cereals, egg custard. The barrels must have been heavily charred, as they weigh heavily on the flavors, both on the nose and on the palate. This makes for a very woody nose and a very spicy palate. - whiskybase.com
