It continues to be run by the Goelet family using traditional French methodology. Their now 66-hectare property overlooking Bass Strait was principally selected for its climate, which is similar to that of Champagne. It affords long ripening periods, which allows the fruit to accumulate flavour intensity balanced with fine acidity.
Their latest entry level cuvee immediately impresses with its white creamy mousse followed by a pale straw colour with pale gold edges and exceptionally fine bead showing great persistence. Good lift on the nose with aromas of pear and a touch of baked apple followed by some toast and yeast lees. The palate displays bready baked apple flavours followed by some subtle toast and yeast lees characters. Clean dry finish with an almost creamy like mouthfeel. Long aftertaste of baked apple, toasty bread and yeast lees.

Chardonnay was where it all began for Clover Hill, and there is a tension and definition to this grape that defines the estate's longest-lived wines to this day. At 6yo, this cuvee upholds a bright, medium straw hue. There's intensity of grapefruit, lemon butter and even the exuberance of star fruit, amidst the toast and burnt butter of bottle age. In creamy texture, mouth filling intensity and undeviating line and length, this is a grand release for Clover Hill, with plenty of energy still coiled into its folds. Drink by 2022.

A long time admirer of the wines and friends of the owners at the time, Roberto Conterno (of Giacomo Conterno fame) purchased a 90% stake in the winery in 2018, renaming it Conterno Nervi. A relatively new designation, Gattinara became a DOCG in 1990, and while the wines show similarities to those of Piedmont, generally Gattinara reds have a more elevated feel, savoury and structured, with plenty of acidity and fine tannins allowing for great longevity.

Roberto Conterno has long wanted to add a classic-method sparkling wine to his portfolio, and his recent acquisition of the historic Nervi estate in Gattinara awarded him this opportunity. A new chapter opens with the Conterno Nervi 2018 Rosé Metodo Classico. A pure expression of Nebbiolo, this first edition sees three grams of residual sugar that imparts a gentle touch of softness over fresh aromas of white cherry, wild rose and grapefruit. Those fruity tones are neatly framed by elegant mineral shadings. The wine's beading is tight, lively and almost spicy on impact. About 90% of the fruit for this wine is sourced from outside vineyards, with the remaining coming from the estate. Drink 2022 - 2030.

A blend of 70% Pinot Noir and 30% Chardonnay sourced from Grand Cru vineyards located in Verzenay and Verzy. Pours with a heady white mousse that shows good hold. A pale straw coloured base with pale gold edgings is finely threaded by a very persistent bead. The intensely scented nose offers up rich aromatics of baked bread, yeast lees and toast overlaid by dried honey characters followed by cashew and hints of citrus. This is still very young and not very complex, though. Disgorged in February 2017 with two grams per liter of dosage. Tasted April 2018.

The latest release of Delamotte's NV Brut Blanc de Blancs is showing well, offering up aromas of citrus oil, crisp green orchard fruit, hazelnuts and freshly baked bread. Medium to full-bodied, round and charming, this is a soft, delicately fleshy wine that's extremely pleasant and pleasure-bent, but it can't match the cut or concentration of the last few years' renditions.

A worthy successor to the super 2008, Delamotte's 2012 Blanc de Blancs is performing very well—despite the fact that it was disgorged as recently as June 2019. Opening in the glass with aromas of citrus oil, dried white flowers, smoke and wheat toast, it's medium to full-bodied, deep and concentrated, with a bright girdle of acidity, well-integrated dosage and a fine mousse, the muscularity of the vintage rendered with uncommon finesse. While this is quite expressive for such a recently disgorged vintage Delamotte, the rewards of even only a few years' patience will be considerable.

On the palate, it's full-bodied, ample and layered, with a fleshy, enveloping core of fruit, lively acids and a long, chalky finish. It has attractive, ripe aromas of honeysuckle, apricot, and pineapple that translate to the palate with juicy fruit and tangerine citrus. The 2006 Dom Pérignon Rosé continues to show very well, unfurling in the glass with aromas of bitter orange, dried white flowers, red berries, toast and woodsmoke. On the palate, it's full-bodied, broad and muscular, with all the phenolic structure and depth that one would expect from a rosé that contains more than 20% still red wine, concluding with a sapid and chalky finish. As I wrote earlier this year, this is a vinous, gastronomic rosé that numbers among the decided successes of the 2006 vintage.

At times powerful, but in other moments finessed, the 2006 constantly changes in the glass, revealing a different shade of its personality with every taste. Perhaps most importantly, the 2006 seems to have gained a level of precision and pure sophistication it did not show last year, when it was quite a bit less put together. Back then, the 2006 was a wine of tremendous potential; today that potential is starting to be realized. Quite simply, the 2006 Dom Pérignon Rosé is a magical Champagne. Don’t miss it.

Unfortunately there is only one new release from Dom Perignon this year. The 2003 is one of the most unusual Dom Perignons I have ever tasted, going back to 1952. Readers will remember that 2003 was a torrid vintage across northern Europe, especially during the critical month of August, when temperatures remained very hot for well over a month. The harvest was the earliest on record, until 2011, that is. I suppose its not that surprising Chef de Caves Richard Geoffroy chose to make a 2003 Dom Perignon, given his penchant for risk-taking, an approach that has yielded so many memorable wines that stretch the perception of what big brand Champagne is and can be. The 2003 Dom Perignon is a big, broad shouldered wine. It does not have the seductiveness of the 2000, nor the power of the 2002. It is instead very much its own wine. In 2003 Geoffroy elected to use more Pinot Noir than is typically the case, and that comes through in the wine’s breath and volume. The 2003 is a big, powerful Champagne that will require quite a bit of time to shed some of its baby fat. The trademark textural finesse is there, though. I expect the 2003 to be a highly divisive Champagne because of its extreme personality, but then again, many of the world’s legendary wines were made from vintages considered freakish at the time. The 2003 is an atypically, rich, powerful, vinous Dom Perignon loaded with fruit, structure and personality. It is not for the timid, but rather it is a wine for those who can be patient. No one has a crystal ball, but personally I will not be surprised if in 20 years’ time the 2003 is considered an iconic Champagne. Anticipated maturity: 2016-2038.

Excellent creamy white mousse. Very fine, delicate yet persistent bead. The nose is refined with both elegance and complexity evident. Aroma of biscuit and cashew over a light lees end note. Creamy palate texture without body ´fat´, yet with plenty of flavour and power. Exceptionally long palate of biscuit, cashew and spice with an aftertaste that lasts for minutes. An essay in refinement.

I am a no-holds-barred Dom addict, but I have to admit to being somewhat disappointed with the '99 vintage, which seemed altogether too delicate, verging on outright simplicity. I have no such reservations about the 2000 vintage, which has the Dom hallmark fluid line and feline grace encouraging the rapid consumption of glass after glass. Along the way you will find notes of nectarine, cherry, brioche and cream, which build into a gloriously long and even finish. It will continue to develop in bottle for decades to come.

Excellent pour displaying a very frothy lacy white mousse that holds very well. Once dissipated it reveals a pale straw coloured base with pale gold edges and an exceptionally fine and persistent bead. Despite the warmer vintage the nose has a sense of freshness to it featuring a very refined aromatic profile of citrus, yeast lees, toast and bready characters followed by chalky lemon like end notes. Reflective of the nose the palate also has a lemony freshness running through a seamless airy mouthfeel. Flavours of lemony citrus intermix with yeast lees, toast and subtle oily nuances. Some roasted almonds also chime in. Dry, crisp mouthwatering finish. Long refined conclusion of yeast lees, oily toast like characters, baked bread, citrus and roasted almonds.

The 2004 vintage was defined by the dry heat experienced in the Champagne region over the final weeks before harvest, contributing to wonderful ripeness in the grapes. According to Chef de Cave, Richard Geoffroy,"...growing and fruit ripening periods went by smoothly, with no difficulties - a phenomenon that we have rarely, if ever, seen before".
The 2004 Dom Perignon pours well opening with a frothy white mousse that shows excellent hold. Once dissipated it reveals a base wine colour of pale straw with a very profuse and exceptionally fine bead. Nosing provides a classic, refined Champagne sniff showing excellent intensity. Aromas of baked bread, yeast lees and cashew are followed by some subtle toastiness with some citrus end notes. Elegant and refined the palate has a flavour profile of toasty baked bread and yeast lees followed by some subtle nutty hazelnut and citrus. Clean crisp dry finish but quite creamy in mouthfeel with long persistent aftertaste of toasty yeast lees, brioche and subtle hazelnut. Enjoy it as often as you can afford to!

Another stellar wine, the 2004 Dom Pérignon is just starting to show the first signs of aromatic development, as well as a bit of added weight it did not have as a young wine. The 2004 remains a bright, mid-weight DP built on persistence and length more than overt volume. I have always had a soft spot for the 2004. This tasting does nothing to dampen that enthusiasm. Drink 2019 - 2039.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.
The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
