This is Wolfburn's second expression - a sherry cask finished malt that starts its life the same way as the "Northland" bottling. Two types of cask are used: 80% first-fill ex-bourbon and 20% first-fill Oloroso sherry hogsheads. At the end of the maturation the whiskies are brought together to create a perfectly balanced dram that's also non chill filtered. The rebirth of Wolfburn has been guided largely by Shane Fraser, who was previously production manager at one of Speyside's most famous family owned distilleries, Glenfarclas.

…early days at the distillery and still finding their feet with the still. The cut on this is wider than on the previous bottling I sampled, but there is no faulting the use of 100% sulphur free Sherry butt. There is the odd aspect of genius attached to this dram, for sure.

Nose: Some citric vibrancy and chilli heat, then a touch of cut capsicum opens things, but immediately this is swept away by estery fruits: fresh pear, Russet apple. Then comes lawnmower box, dewed grass and lightly Sherried warmth rises: nuts and fruit cake mix. With water, proving dough - then the pears again. Palate: Very gentle, fruity palate with excellent feel. Shows impressive palate weight for such a youngster. The wood is handled lightly. In fact, there's as much creamy vanilla and soft fruits as there is overt Sherry. Already well-balanced. With water it is all about feel and, while it shows its youth slightly at the end, that's no drawback to its enjoyment. Recommended. Finish: Light spice. I continue to be blown away by this newcomer...
