New World Projects Ginger Beer Cask Finished Starward Single Malt Australian Whisky (700ml)

Finishes for whisky are no longer limited to traditional sources like Sherry or Bourbon. And why should they be? There are a myriad of beverages that can potentially contribute to the texture and/or flavour of the spirit in a complimentary way. Here's one you might never have considered: Drawn from the distillery's solera (which typically exceeds 50% ABV), this otherwise “standard” batch of Starward experienced an unusual three month finish. Proprietor, David Vitale explains, "We have created a barrel fermented alcoholic ginger beer using our trademark malted barley, fresh ginger and a blend of aromatics. This single 200 litre cask was disgorged in order to become the temporary caretaker for a refill of Starward whisky over 3 months. The marriage of ginger seasoned oak and our trademark bright, fruit driven whisky has resulted in a vibrant, zesty spirit that delicately integrates the contrasting elements of sweetness and spice. The ubiquitous orchard fruits of Starward are seamlessly interweaved with a clean, warm spice and youthful complexity, imparting a silky mouthfeel and generous finish". It recalls Belgrove Distillery's recent distillation of Ginger Beer (see "Ginger Hammer" on this site.) New World Projects have limited this edition to 383 bottles, so be quick!

Tasting note: Copper amber. Soft yet heady bouquet builds over several minutes developing deep scents of oxidised apple, nutmeg and ginger ale. Aeration draws out kumquat paste and ginger bread in the second inspection. Third pass finds gobstopper and banana confectionary accented with hints of Indian spices. A terrific sniff. Nicely balanced as the spiciness carries the fruit-soaked oak; shows restrained sweetness until the finish as ginger-laced fruit cake and barrel char flavours merge. Concludes warming, gingery and long with a melting pot of subtle banana confectionary and ginger beer notes in the aftertaste. A genuine delight, this really grows on you.
