Taking a leaf from the Scotch Whisky playbook is this 2021 limited edition that yielded 1400 bottles and quickly sold out. Chris Thomson, Head of whisky creation at Lark is known to have a penchant for oloroso barrels. He hand-picked two Australian Oloroso-style casks from Seppeltsfield in the Barossa Valley to finish a combination of ex-Sherry and ex-peated Port single malts from Lark’s Coal Valley Distillery. The final flavour profile is summed up by Lark as an “…intoxicating combination of toasted pastries and subtle peat smoke with a classic Oloroso finish, melting into warm butter and slowly browning bread… the unmistakable aromas that waft outside your local bakehouse in the early moments of the morning”. 47% Alc./Vol.
