Made from rare Wakayama grown Budou sansho, renowned for its large, grape-like bunches of fruit. Harvested by hand, the unripe green sansho berries can only be picked from mid to late May making it a rare and premium ingredient, prized by chefs and bartenders alike. Vibrant and aromatic with a tingling mouthfeel, this bitters delivers electric bursts of green peppercorn and yuzu, drifting into notes of cedar, herb and wild citrus, finishing with the long-lasting, delicate, numbing whisper that only sansho can bring.
