Of six barrels tasted, a four year old from a heavy toast, #2 char, new American oak cask jumped out for its richness and poise, without burying the natural character of the grain. At 61.5% ABV, the whisky arrives quite composed. Over-proof weight delivers a broader profile that includes aromas of brown sugar and old tawny port, along with flavours of cocoa, summer pudding and buzzing rye spice followed by a long, warming vanillin-oak finish. First and foremost, we'd recommend appreciating this straight before experimenting with dilution. It’s a big rye that’s also going to work in a Manhattan, with power in reserve to hold up to sweet vermouth and bitters, or boost almost any rye cocktail. For a simple food pairing, try it with Roquefort on toasted rye, where salt and funk cut through the richness, or with a square of fine dark chocolate.
