This is the world’s first gin built around native Lemon-Scented Grass (Cymbopogon ambiguus). The process involves an overnight steep, pot distillation, vapour infusion and a final post-distillation maceration. Lemongrass, citrus and fresh ginny notes are evident on the first sniff, then more pronounced on the palate where crushed pine buds and lemongrass fill the middle stages; Pickled ginger and wasabi warmth lifting the finish.
