Australian native botanicals, Saltbush and Lemon Myrtle, round out the palate making for a refined Dry Martini or G&T. 46% Alc./Vol. Japhet White (1783-1866) was one of Australia's pioneer distillers. He arrived in New South Wales in 1816 aboard the convict ship Surry after being found guilty of fraud in Dublin. Not one to let this hold him back, he was running The Beehive Inn in Sydney within months of his arrival and went on to open The Bathurst Distillery in the late 1820's making him the colony's first inland distiller.
