Speargrass Arafura Gin (750ml)
Founded on a bedrock of botany, geology and wine industry experience, Dom Wundke's passion-project drew inspiration from his travels in Europe. He recognised locale matters, as does a connection to place and the flavours that come from it. His gin is called 'Arafura', after Australia's northern sea, and it uses botanicals from Queensland to Western Australia. Speargrass is one (a small stalk comes in every bottle). Distilled in Darwin's heat, this svelte textured, harmonious blending of rose and rosella (wild hibiscus) comes with a saline-grapefruit twist and a deft injection of cinnamon warmth - juniper stitching it all together. The recipe has drinking in the tropics in mind: Carefree, bright and complex enough to come back to, again and again. Mix it with bundles of ice and a slice of grapefruit, or try Mediterranean tonic to open up the florals. 40% Alc./Vol.
