Almonds from the Keen family's lush biodynamic orchards on the Murray, macerated with a lick of golden syrup and a dash of salt are at the heart of Marionette's Amaretto. A marzipan character from Goulburn Valley apricot kernels, held over from Marionette Apricot Brandy and Muscat from Australia's fortified-wine heartland of Rutherglen round out this cocktail staple. Unflocked and only lightly filtered, creating a hazy liqueur packed full of natural flavour, this Amaretto is rich and nutty with a touch of marzipan, bolstered by varietal raisin notes from the Muscat.
