Following the old saying, “When life gives you lemons, make limoncello!”, Lost Pheonix Spirits has created a fusion of light, zesty, and sweet notes, with an upfront burst of refreshing lemon tang. The process is driven by a commitment to quality and precision at every stage — starting with the lemons. Large, premium local lemons — primarily from Riverland, occasionally Adelaide Hills, with a preference for Eureka lemons due to their vibrant aroma and flavour. Each lemon is hand-peeled and juiced. By avoiding automated methods, they keep the bitter pith out and the bright citrus character in. The peel is then macerated in high-strength spirit to draw out essential oils and natural colour — this becomes the heart of our limoncello. Meanwhile, the juice is frozen immediately to preserve its natural acidity and colour, with no need for preservatives. After maceration, all elements combine in carefully measured amounts for balance and consistency. Finally, the finished product is bottled and ready to be enjoyed.
