Kitajima Brewery was established in 1805 in Shiga Prefecture near lake Biwa. As one of the oldest and most respected sake breweries in Japan, Kitajima produce a range of full flavoured and fruitier styles. Miyosakae is their traditional core range, while in 2002 they developed the Kitajima range for more innovative releases using the kimoto natural starter method. As evidenced in the name, the premium Oumi rice is used here

Tasting note: Showing very pale water white with a glint of champagne at the core. Aromas are fairly neutral with meringue and nougat supported by some yellow melon and starfruit peeking through. While initially it's quite restrained, with air the floral jasmine and white leaf tea notes emerge. Similarly restrained flavours are present on the palate, notes of white nougat, white chocolate, and jasmine florals, all very pure and refined. Indeed this is incredibly crisp and clean in profile, perhaps looking more wine like than some of the more robust earthy sake styles. In that style it would match well with sashimi and other lighter fresh seafood dishes. Serve chilled.
