Founded by avid Gin historian, Christian Jensen, this micro distillery is at the vanguard of Gin distillation’s return to its spiritual home of London. Using a 500 litre, stainless steel and copper still made in London by John Dore and co. head distiller Dr Anne Brock meticulously crafts tiny batches based on Christian’s extensive research. Jensen’s Old Tom is based on a recipe Christian sourced from a distiller's handbook written in the 1840s.

A recreation of the Gin style first shipped to America, this isn't sweet like most modern Old Toms, but dry and earthy with an accent on root botanicals. In fact it meets the EU requirements for London Dry Gin. Jensen’s Brand ambassador, Hannah Lanfear (also one of planet Earth’s more talented bartenders) recommends it for robust cocktails like the Negroni or for a prototypical Martinez.

Tasting note: Clear. Light to moderate aromas of mineral, white pepper and orris root (?) Low key juniper and citrus peel. A very pure, soft-textured style with a delicate earthy / peppery edge. Very subtle flavours hint at juniper, coriander and parsnip through the creamy finish. Ends dry, fresh, warming, perfectly balanced. Quite dry for the genre. 43% Alc./Vol.
