Sotol is the northern cousin to Tequila and Mezcal. Made from the so called "Desert Spoon" plant ('sotol' in Spanish), which can be found in the Chihuahua desert and further north in New Mexico and Texas, this prickly evergreen can take between 12 and 15 years to mature, at which point, just like Tequila, it’s harvested, the heart is cooked and the juice is fermented and distilled with some expressions barrel aged. In international markets at present, 'Hacienda de Chihuahua' is one of the most prominent brands .

Tasting note: Crystal clear. Briney, beeswaxy with sweet mustard pickle followed by hints of green olive and white pepper. Light to medium bodied, svelte textured with gentle spices and flavours of candle wax, soft smoke and salty green olive in the clean and sprightly finish. Halfway between tequila and mezcal? 38% Alc./Vol.
