Dewazakura have played a significant role in the Yamagata prefecture developing their own rice suited to their region with the local agricultural bureau, and this is known as Dewa Sansan, which Dewazakura uses for a selection of their sake. They have also developed special yeast to suit the climate. The brewery is known for their distinctive 'fragrant' sake, which can be attributed to their yeast selection as well as their low temperature fermentation techniques.

Tasting note: Pale lemon in the glass. Highly aromatic nose of citrus fruits, orange and tangerine, ripe melon, custard and mushrooms. More restrained on the palate, while there is some melon, pear and white peach flavours, it also tastes of earthy mushrooms, faint herbal notes and (not surprisingly) rice. Very clean on the finish. The milky weight on the palate works well in this versatile style of sake. Serve chilled or warm.
