This highly individual wine from De Bortoli is made from the juice of the grapes affected by Noble Rot, which is fortified then aged for several years in old oak barrels. The wine is dark viscous and highly concentrated with aromas redolent of coffee, anise and toffee. This wine was originally made by Vittorio De Bortoli in the 1930's but never released. It took a new generation of winemakers to discover the secret of Black Noble. Since 1982, portions of the Noble One juice have been fortified and left to age in old barrels. The vintages are blended to give an average age of greater than 8 years. The base wine for Black Noble comes from 1972 material which was a very early attempt to make a Sauternes style. This wine is completely unique to De Bortoli.

Black Noble is dark, viscous and hugely concentrated displaying a complex array of flavours and aromas suggesting coffee, anise, toffee, soy sauce, black olives, and even vegemite undertones. All this is accompanied by complex aged characters from oak maturation in small barrels for an average of eight years. On the palate the finish is long and luscious. 17.5% alcohol volume.
