Cut Hill Distillery Private Barrel Series Wine Cask Australian Malt Whisky (700ml)

A marriage of five 100L octave barrels (ex-Shiraz) from Barossa, Eden Valley, McLaren Vale and one 200L hogshead ex-Tawny (originally a Bourbon cask). The various liquids were matured for between 2 and 4.5 years. The opening pass is a little green and sharpish with a new oak / white pepper and a grassy edge that carries over to the palate. Light to medium bodied, the complicated cask mix feels like it's had a flattening effect rather than bolstering character. A spicy finish rounds off an easygoing, quaffable style. Distilled at McLaren Vale Distillery. 900 bottles for the inaugural release. 43% Alc./Vol.

Notes from the producers... Lifted aromas of raisins, banana, and waxy green apple layer a complex structure of lanolin, honeycomb, and dusty floral notes with touches of caramel and spice. The wine casks in this blend lend a grippy tannic line to the glass, pulling orchard fruits and refined oak flavours to a generous finish. Enjoy as you would any whisky, but this would be an ideal candidate for your highball when the weather calls for it.
