Between September and November, Drouin harvests thirty organically grown apple varieties including bitter, bitter-sweet, sweet and sharp cider, then naturally ferments them. Typically kept for months in vats and tuns, young cider is distilled to produce fruity spirits destined to be sold as young calvados, while cider that’s kept longer is distilled around June to produce a more robust spirit better suited to long ageing. Drouin uses casks that may have previously contained sherry, port, rivesaltes (a type of sweet wine) and banyuls (French fortified wine). In this example, the Réserve is a blend of several distillates mostly aged in smaller used casks. The style intends to offer a nice balance between primary orchard fruit notes and spices. 40% Alc./Vol.
