Akishika was founded in Osaka prefecture in 1886, and under the present 6th generation owners this tiny brewery is renowned for creating some of Japan’s most exceptional and unique sake. All of their sake show great structure, acid and body which enable them to age extremely well. Known as the "King of Sake Rice", Kobo #7 is made using Yamada Nishiki rice, and along with the traditional Yamahai yeast starter method, Akishika aim to produce an extremely pure and expressive sake. This sake is also unfiltered (muroka), unpasteurised (nama), and undiluted (genshu).

Tasting note: Pale lemon in colour, this sake is highly aromatic with pure fruit flavours leaping from the glass. Cantaloupe, green melon, banana, vanilla yoghurt and nougat, all very fresh and inviting. The palate is similarly pure, showing flavours of green melon, pear, light tropical notes and quince spice, along with rice and nougat. Umami is well balanced with bright, clean acid and an impressive long, dry finish. All together a very accomplished, pure, and flavoursome sake. Drink chilled. [2016 vintage tasted].
