A Snappy Pecorino with crunchy acidity and a long energetic stony mineral laden finish.

Twenty percent fermented in older French oak. Brilliant pale straw colour with green tinted edges and a watery hue. Aromas of green apple skin and lime mix with fresh herb and wet slate notes. Granny Smith apple, green pear and lime fruits line the snappy palate. Infusions of fresh Mediterranean herbs and stony mineral elements sit in the background. Crunchy acidity with a long energetic stony mineral laden finish.
Drink over the next 1-2 years.

A distinctly floral wine that leads with elderflower, fennel bulb and Star Jasmine. Fruit then shows up in droves with Greengage plums, white nectarine and pomelo. That to and fro of vibrant fruit and saline succulence is countered again by savoury white pepper and lime skin bitterness. All of this makes for detail, complexity and intriguing drinking. If you haven’t discovered Pecorino yet this is a friendly, welcoming wine and designed to please. Drink now with pea, mint and feta risotto. Drink 2026-2027.
