Brilliant water like core with green highlighted surrounds. Scents of Granny Smith apple and lime zest jump out of the glass followed by some fresh herb and flinty mineral notes. Zippy green apple and lime zest flavours infused with fresh herbs race across the palate with flinty mineral elements lying underneath. Crisp acidity with a snappy, saline laced finish.

This came off two vineyards, with the fruit harvested early to retain freshness. The free run was fermented cool in tank and the pressings in barrel. That early pick and tank ferment make for a strikingly fresh and briskly thirst-slaking style, with tart green apple, lemon, green almond and thyme. It’s pretty linear but not tense, a pithy burr and some brininess complexing. Drink by 2026.
