2023 Pedestal Cabernet Sauvignon
Rich, concentrated and fleshy textured yet retaining the varietals trademark refinement.
Fruit for this wine is sourced from a range of vineyards located throughout the northern Margaret River region with maturation taking place in a combination of new and 1 to 2 year old French oak barriques for 12 months. Winemaker Larry Cherubino stating that in general terms, Northern Margaret River is better suited to red wines with its slightly warmer Indian Ocean influence whereas southern Margaret River favours white wines due to the cooling influence of the southern Ocean breeze.
Dense midnight black core with a dark red black tinged hue. Enticing the olfactory senses are intense aromas of blackcurrant, mulberry and subtle black olive followed by cedary tobacco, earth and spicy dried herb notes. Rich, concentrated and fleshy textured yet retaining the varietals trademark refinement, the palate is generously endowed with blackcurrant, liquorice and ripe mulberry fruits. Sturdy yet fine grained tannins with elements of cedary tobacco characters, dried herbs, earth and spice detailed across the long savoury finish. Great value.
