Wild fermented and matured for 11 months in old large and small oak barrel. Brilliant pale straw colour with a faint greenish tinge to the outskirts and a watery hue. Aromas of white peach and pear mix with hints of dried honey, biscuity nougat and spice. Light in weight and vibrant in its feel, lively melon, pear and citrus fruits are featured over delicate dried honey and mineral characters. Brisk acidity finishing fresh and elegant.
