2023 Gundog Estate Flintlock Shiraz
Savoury yet deeply fruited.
Matured for 16 months in French oak. Totally opaque black dark red colour with a dark red hue. Elevated dark plum and liquorice aromas are interwoven with vanillin cedar, scorched earth and peppered dried meat notes. Rich fleshy blackberry, dark plum and liquorice fruits meld into an earthy clove, vanillin cedar and peppered meat background. Polished fine grained tannins with a savoury yet deeply fruited conclusion.
Drink over the next 5-6 years.

Deep, dark fruit with a plush entry and a tapered, acid-driven finish. Notes of red plum, goji berry and sour cherry are accented by sweet spice and gentle oak. The fruit intensity is impressive, with layers unfolding beautifully over time. Decanting is recommended to unlock the fragrance and reveal the layers. Drink by 2029.

This is the Hilltops prestige release from the team, a superb cool climate red. It is a blend of the best they can source from the region (as it turned out, the fruit again came from the Freeman vineyards and those at Boorowa). It received sixteen months maturation in French oak puncheons, 25% new. This is the second release of this wine. Deep red, this is delightfully fresh with bay leaves, dried herbs, raspberries, soy and beef stock. Soft and seductive in texture, there are very fine tannins here and a line of acidity running the full length of the wine. Well structured, this is poised and offers a pleasing, lingering finish. It will drink beautifully for at least the next eight years and one can reasonably expect further improvement over that period. Drink 2024-2032.
