2021 Soumah Single Vineyard Hexham Savarro

Savarro is an ancient green-skinned, tight-bunched grape variety that was first recorded in the 10th century. Over the millennia it travelled to all corners of Europe and was then extensively used to create many of today’s modern varieties. The cool climate of the Yarra Valley is perfect for the Savarro, with Soumah’s take on the variety cool tank fermented to retain fresh aromatics and aged on lees to promote texture.
Brilliant water like colour with a faint tinge of green to the edges. Delightful fresh pear, lime and green apple scents are trailed by wet stone and fresh herb notes. Brimming with energy are vibrant pear, lime and green apple fruits infused with fresh herbs. Excellent intensity with a stony mineral back drop and snappy acidity. The aftertaste long and highly refreshing.

Yarra Valley savagnin/savarro.
This walks an astute line. Juicy fruit is to the fore, there’s enough texture to give it that something more, and it still manages to hone to a lengthy finish. Grapefruit pulp, citrus, anise and herbs. It’s tip-top delicious, in a refined way. Drink 2021-2025.
