2021 Philip Shaw No. 8 Pinot Noir
Semi translucent dark red colour with black toned edges and a light red to brick red hue. Fragrant violet, red to dark cherry, strawberry and clove scents sail out of the glass with some brambly cedar and spice notes also chiming in. Very supple and smooth across the palate featuring dark cherry, strawberry and dried herb flavours over a brambly back drop of clove and spice. Velvety tannins finishing expansive, savoury and spice laden.
Drink over the next 4-5 years.

Whole bunches (40%) and French barriques (30% new); 10 months maturation on fine lees. Lingonberries, redcurrant and strawberry leaves. The bunchy component adds a sappy, ripe mulberry leafiness and orange bitters on the palate. It's a wine that is designed and crafted from knowledge. Will cellar well. The oak just slightly clips the pureness of the fruit. Drink by 2028.
