German born Timo Mayer, along with partner Rhonda Ferguson established Mayer in 1999, on the slopes of Mt Toolebewong, between Healesville & Woori Yallock. They produce a small range of hand crafted, single vineyard wines, believing that wines are made in the vineyard and not the winery. All wines are unfined and unfiltered to show the true expression of the vineyard. Vines are often close-planted, and winemaking frequently utilises a generous use of whole bunch.
Timo sources his Syrah from a small portion of the Bloody Hill vineyard, and uses 100% whole bunch fermentation for his trademark vivid, stalky aromatics. Intense and flavourful, with plentiful texture and tannin, balanced by fresh acidity.

Estate grown, 100% whole bunches, 10% new oak. A fabulous, deep, purple crimson. Smells fabulous – reminiscent of good Cornas, with its aromas of dark fruits, crushed granite, brined black olives, red peppercorns and bay leaf. Backwards and structured on the palate, I'd suggest decanting this if you're going to open a bottle or any time soon, but you'd really want to have some in the cellar to enjoy in 5–10 years, if not longer.

Whole bunch syrah from the farm. Syrah vines planted in 1999.
Very fragrant, white pepper, mezcal, game meat, anise and raspberry. Succulent, feather weight but with plenty of character, even a palate staining tannnin and fruit juice mix that makes for some sexy pleasure. Svelte, sultry, lighter weight syrah expression with plenty of spice and savoury flavour. Wonderful wine. Drink 2021 - 2032.
