While the origins of this domaine date back to Charles-Louis-Noel Billaud in 1815, it's the current generation winemaker Samuel Billaud that has made waves with the exceptional quality of his wines produced since the creation of this project in 2009. Following the sale of the family business Domaine Billaud-Simon to Faiveley in 2014, Samuel received further prized parcels of land and now makes wines from five of the grand cru vineyards, and five of the top premier cru vineyards. The wines are vinified in a mixture of stainless steel and large old wood barrels, the latter mainly for the premier and grand cru wines.

A ripe yet still reasonably typical nose reflects notes of lemon confit, white flowers, oyster shell and seashore nuances. The sleek, intense and delineated flavors possess good vibrancy on the notably more refined if not quite as powerful finish. I like this balanced effort plus it should age effortlessly. Drink 2027+.

The 2020 Chablis Vaillons Vieilles Vignes 1er Cru comes from 70-year-old vines and is aged entirely in tank. It has a crushed rock and Granny Smith apple nose, nicely focused and vibrant. The palate is fresh and taut with a fine bead of acidity, and lively and tensile toward the finish, which shows real sparkle even at this early stage. There is something a little understated about this elegant Vaillons. Drink 2025-2042.

Samuel reports that he lost more crop to grilling here than on the right bank. 60 year old vines from the heart of Vaillons. I love this nose, which requires teasing out, it is a little more svelte and even floral than in past history, but fine, precise and balanced. “Ca plonge sur la caillasse” – this dives deep into the stones. And goodness me, doesn’t it. Quite an astounding finish here. I cannot see how you could do this any better.
