While the origins of this domaine date back to Charles-Louis-Noel Billaud in 1815, it's the current generation winemaker Samuel Billaud that has made waves with the exceptional quality of his wines produced since the creation of this project in 2009. Following the sale of the family business Domaine Billaud-Simon to Faiveley in 2014, Samuel received further prized parcels of land and now makes wines from five of the grand cru vineyards, and five of the top premier cru vineyards. The wines are vinified in a mixture of stainless steel and large old wood barrels, the latter mainly for the premier and grand cru wines.

Moderate wood influence surrounds the ripe yet exceptionally fresh aromas of citrus confit, white orchard fruit, iodine and sea breeze. While there is fine intensity, there isn't quite the same concentration to the medium-weight flavors that also possess a refined texture, all wrapped in a lingering finish that isn't quite as structured or complex. This is definitely appealing but doesn't appear to quite have the same upside potential. Drink through 2028+.

Bursting with aromas of citrus blossom, crisp nectarine, nutmeg, freshly baked bread and orange oil, the 2020 Chablis Grand Cru Les Preuses is full-bodied, satiny and seamless, with a textural attack, racy acids and a long, mineral finish. It's the most ethereal, aromatically expressive wine in the range. Drink 2025 - 2045.
