2020 Francois Rousset-Martin Cuvee du Proffeseur Savagnin
Francois Rousset is producing some of the most captivating wines in the Jura right now. Launching his winery in 2006 in the Chateau Chalon appellation, Francois labels his wines as Cotes du Jura since he makes them in a non-oxidative ouillé or topped-up style. Vinified by parcel, the farming is organic-certified with little to no sulphur and bottled unfined and unfiltered.

The 2020 Savagnin Cuvée du Professeur is slightly different, as it matured in a 4,500-liter Alsatian foudre from Zind-Humbrecht with full lees and no bâtonnage. The wine comes from one of the best terroirs in Château Chalon, Sous-Roche, a very iconic place where you also have a picturesque view of the rock. It's very clean and elegant, with some spiciness (it gets into the wine, no matter how often you top up, François told me), a little curry, licorice and aromatic herbs. It has a moderate 12.5% alcohol, with great freshness and a very tasty, salty finish. Superb again. 6,000 bottles were filled in January 2024. Drink 2024-2034.

The complex 2020 Savagnin Côtes du Jura Cuvée du Professeur unwinds with prominent notes of saffron, dried chamomile, ripe pear, yellow apple and a touch of jasmine. Powerful and concentrated, the 2020 is a transparent reflection of the warm vintage, but the steely acidity cuts through like a scalpel, flawlessly preserving freshness. Focused, persistent and saline on the finish, the 2020 is simply awesome. Drink 2024-2035.
