Epsilon is the project of Aaron and Julie Southern (Julie is a member of the Kalleske clan) who own vineyards in the Northern part of Barossa. As the familiar story goes with so many growers they sold off their fruit to larger wineries until a chance meeting with the Massena boys Dan Standish and Jaysen Collins. Under their guidance they convinced them to start up their own brand in 2004 and build a winery on the property. Maturation takes place for approximately 12 months in seasoned French and American oak hogsheads with only the best batches making the final blend.
Impenetrable inky black heart with a deep dark red black hue. Fresh dark plum and liquorice scents mix with black cherry, lightly smoked vanillin cedar, subtle fennel and blackpepper notes. Rich, seductive and blackpepper infused liquorice, dark plum and black cherry fruits overlay a back drop of spicy vanillin cedar and peppered fennel. Bright acidity counterpoints a fleshy mouthfeel. Velvety yet well constructured tannins. Long youthful blackpepper infused aftertaste.
Drink over the next 5-6 years.
